Empire State Muffins

These are very tasty! My modifications were using dried blueberries instead of cranberries, reduced sugar to 1 cup, added some vanilla and made 12 regular muffins and 12 mini muffins. I put the mini muffin pan in the over at around 12 minutes to go with the larger muffins cooking for 22, and that seemed to bake them up well. The larger ones seemed a bit brown, so 20 is probably good.

Eggnog Cookies I

These cookies will sadly not win any beauty pageants. Mine turned out lumpy and bumpy after trying to manhandle the sticky dough into a passable shape, and I can see that the suggestion to use a cookie press or pastry bag would have resulted in a prettier product. That being said, the taste and texture is very nice, which was a happy surprise. I don't think these cookies will "wow" anyone or be highly sought after on a cookie plate, but they are a tasty addition.

Homemade Crispy Seasoned French Fries

How can you improve upon fried potatoes? By battering them, of course :) I thought this was a simple yet pretty tasty recipe. Definitely follow the directions of placing potatoes in the oil one by one, or you will have clumps o' fries (although that makes it pretty easy to turn them over!) I used the restaurant Red Robin's seasoning, which had pretty much the ingredients listed here, making it that much simpler.

Chicken Katsu

I've had some sort of "cooker's block" when it comes to frying chicken correctly, so I really appreciated this recipe - all the coating stayed on the chicken as it cooked, and the result was moist and delicious. It was the first time I had used panko crumbs, and actually, this ended up being the recipe on the back of the box, so apparently it is tried and true. You will need to use an exciting sauce to pep up the flavors of your meal as recommended, since there is nothing overtly exotic about the chicken itself.

Chicken Noodle Casserole I

This is a wonderful base to expand upon and make a really good casserole. I cooked frozen chicken breasts and the condensed soups (One of the cans was a Campbell's mushroom with garlic) together in a crock pot for a few hours on "high", then shredded the chicken. I took bits and pieces of advice from other reviewers, adding sauteed mushrooms, onions, garlic, peas and some Parmesan cheese. I also used a garlic/parsley flavored noodle. Even with all the additions, the flavors were not overpowering at all, so be prepared to tinker if you want don't want a pretty bland product!

Fudge Truffle Cheesecake

I have made this at least two times so far, and people have given me great compliments on it. I think something to remember is that if you put quality ingredients in, it will be that much better, like Godiva chocolate and Valrhona cocoa powder instead of Toll House and Hershey's - much more expensive, but worth it! I made a brownie crust for one try, and that was extra superb!

Ham and Bean Soup

This was quite a tasty soup. I mashed up some of the beans to make a thicker base and then ended up re-cooking it quite a bit the next day in a slow cooker when taking it to a potluck. I think the longer it cooks, the better, and as with many things, tastes better the second time around.

Oatmeal Peanut Butter Cookies

These cookies are utterly delicious - weird how I've had plenty of oatmeal cookies and plenty of peanut butter, but never thought of combining them. I used all butter in the recipe, added some vanilla and used whole wheat flour. Perfect!

Cornbread Muffins I

These are incredibly tasty muffins! I was concerned about the outcome when I put them in the tins, the batter was like cookie dough! Might have been something to do with substituting cream for the milk. The only complaint I have about them (and again, this might be a result of the cream substitution) is that the baked muffins are lumpy, bumpy and not all that pretty. They are meant to be for a work potluck, but after tasting the first one, they may not make it that long.

To Die For Fettuccine Alfredo

Of course, I've eaten Fettuccine Alfredo before, but never made it. As I was stirring the butter into the cream, my arteries were screaming to stop, but I persisted, and the result was delicious. Although I hate when people rate recipes after they've made numerous permutations, I have to say that I added peas (added them frozen to the colander and thawed/cooked them while draining the pasta) and leftover chunks of Christmas turkey. However, I think the important part of the recipe to rate is the sauce, which does get 5 stars for ease of preparation and excellent taste. I had lemon juice on hand to add in case the cheese wasn't melting nicely like some other reviewers mentioned, but never needed it, the sauce came together beautifully (even despite my yet-another addition of some shredded pizza cheese). Thank goodness I made this recipe before New Year's diet resolution time!

The squares were sticky and hard to get out of the pan and the chocolate topping didn't stick very well to the oatmeal bottom. That said, it was pretty tasty.

Caramel Frosting I

This frosting is delicious...but you have to work quick, otherwise, it hardens up and becomes impossible to spread nicely. I used half and half in the recipe for extra yummy calories. I used the recipe to ice cupcakes (made with the Black Magic cake recipe found on this site), which were a hit!

Black Magic Cake

This was an utterly delicious recipe! I made cupcakes with the batter, and used a caramel icing recipe found on this site. I have never tasted moister cake. My grandma is famous for her chocolate cupcakes with caramel icing, but my family admitted that these tasted even better than her recipe.

Ortega® Black Bean Soup

This was a very delicious and easy recipe. I wanted a more chunky soup, so I saved some of the black beans from the blender, and had them swimming around whole. I also threw in some smoked sausage to ruin an otherwise healthy dish!

Downeast Maine Pumpkin Bread

I made this bread for trick or treating within my office, and many people commented on how good it was! I especially liked how moist and dense the bread was. I used pumpkin pie spice instead of all the separate spices, and it really created a great flavor. Thanks for a wonderful recipe!

Sausage Gravy I

I made this recipe for a work potluck...it was a certifiable hit! I kept it warm in a crockpot for a good 3-4 hours, and it still tasted wonderful. I used skimmed milk and half and half when making this, and added the crumbled bacon from my fat-making. Really a simple, but delicious recipe!
