I'd give this more stars if I could. I made a few changes, based on suggestions of others. I added a handful of shredded carrots, skipped the salt, used a can of chicken broth in place of some of the water, and added about 3 ounces of pepperjack Velvetta. Amazing soup!
Update: I've made this many times. I stopped adding the carrots, replace all the water with chicken broth, and add at least 4 ounces of Velveeta pepper jack cheese. It's my favorite soup, and it's versatile. You can add more or less of the onion, celery, and ham and also play around with other ingredients.
