About this Cook
I've been an educator my entire career. When I retire at the end of this year, I'm looking forward to more time to cook and bake.
My favorite things to cook
Recently, I've been trying to make new soups. I find there's nothing more satisfying than making a really good soup from scratch.
My favorite family cooking traditions
Definitely Thanksgiving. Recreating the menu my mother always made.
My cooking tragedies
When I got my first microwave, I tried making chicken breasts. They came out so hard and tough we couldn't cut them and had to throw them out. My husband still refers to the "chicken jerky".

Buffalo Chicken Soup
Just what I was hoping for. I followed the directions with just two changes. I used all chicken broth instead of any water, and I added about 2-3 oz of whipped cream cheese. I was hoping for something like the buffalo chicken dip we all love, and this was it. Served it with toasted pita triangles, and the family loved it.

Irish Cream Bundt Cake
This was a hit with my Soup Club and with my husband. I was worried about the 18.25 oz. cake mix because all of the mixes in our stores are now between 15 and 16 oz. I used a cake mix that was about 16 oz., made no other changes to the recipe, and it worked fine. I used a nine-inch bundt pan, and that was a good size for the amount of mix. One other suggestion I'd make is to make sure you get the glaze to a full rolling boil before you start the five minute timing. If you don't, the glaze may not set up and will be too runny.

BBQ Chicken Calzones
I made this almost exactly as written (just added more bacon and more barbecue sauce based on other reviews). It was easy to put together and was very good. I wasn't sure about the cilantro, even though I love cilantro, but it really does add something to the dish. Unless you absolutely hate cilantro, don't leave it out.
