Sweet Corn Tomalito

Excellent! This was exactly what I was looking for! It's the same as the Tomalito served by the famous Chevy's Fresh Mex restaurant. Thanks for sharing this tasty recipe! Seerved it for Cinco de Mayo - great hit!

Chicken Enchilada Soup III

Baked Lemon Chicken with Mushroom Sauce

Most excellent! I served this with garden rotini pasta (the tricolor spiral pasta) and steamed asparagus and it was a hit! Even my toddler loved the mushroom sauce and pasta!!! Other variations: Since I didn't have a whole lemon on hand I used half lemon and a whole lime and it was delish! I also added 1 to 1 1/2 cup of broth for more sauce. This is now on our family favorite recipes list! Thanks for sharing this simple, healthy and delicious recipe!

Ruby Red Layered Salad

Very tasty. Love the tartness of the raspberry jello and the frozen raspberries. Added whip cream instead of sour cream and it was delish! Second time made it with the sour cream - it was so much better! Don't skip the sour cream!

Banana Sour Cream Bread

Most Excellent! One of the best banana bread recipes I've made! Very moist and addicting! Great way to use overripe bananas! Made 1/2 of the recipe. Topped one loaf with chopped walnuts, cinnamon sugar, and some coconut - delish! My friends are asking for the recipe and my family wants more! Thanks for sharing!

Semolina Pudding

Great! No bad smell as the recipe indicates. Reducced the butter to 1/4 cup. Added less sugar also 3/4 cup. Did not add any cinnamon. Just what I was looking for. Very tasty - will make again!

Rice, Asparagus and Cucumber Salad

Delicous! Made this with Jasmine rice. Used 1 Tbsp Dijon and 2 Tsbp sugar. Also added diced tomatoes and corn for more veggies. Served with baked Tilapia. Great side dish for a BBQ and Summer Salad for the HOT months ahead!

Cottage Cheese Chicken Enchiladas

Very good! I didn't have corn tortillas on hand so I used flour and they were just as good. Also used fat free cottage cheese and sour cream and it tasted great because of all the seasonings. Served it with mexican rice, corn, salsa and chips.

Bodacious Broccoli Salad

Cream Puffs

Most Excellent! I grew up in a French owned country and I'm always looking for the best French recipes. Even though this one doesn't use homemade "creme patissiere" to fill the cream puffs the vanilla pudding and cream mixture is great and really fast! The "pate a choux" or puff dough however is fabulous! I made smaller sized puffs for the kids. I drizzled some melted chocolate to decorate and sprinkled with powdered sugar! They did not last long! Merci beaucoup & Bon Appetit!

Spinach Quiche

Excellent! I added some diced ham. Used fresh spinach that I nuked then chopped. Increased chedddar since I did not have feta. Didn't have mushrooms either - result: incredible! Next time I'll try it with everything - I'm sure it'll be delicious!!! Great with Best Ever Pie Crust!

Best Ever Pie Crust

Love it! So easy to make and delicious in all recipes requiring store bought pie crust! Used it with pie and quiche! Thanks!! I used half the dough without refridgerating it and it turned out fine! So if you're in a hurry skip the chilling part and use it! The other half of the dough I chilled and they both turned out the same!
