Chicken Enchilada Soup III

Cottage Cheese Chicken Enchiladas

Very good! I didn't have corn tortillas on hand so I used flour and they were just as good. Also used fat free cottage cheese and sour cream and it tasted great because of all the seasonings. Served it with mexican rice, corn, salsa and chips.

Melt - In - Your - Mouth Shortbread

Excellent! They seriously melt in your mouth! I made the mistake of only making half the recipe - these are soo good they will be gone in no time. Very delicate and light. Great drizzled with melted chocolate.

Bread Pudding II

Used old baguette, 3 eggs and 1/2 cup sugar as recommended by other reviewers. Sprinkled the top with a little brown sugar before baking. Turned out excellent! Will defenitely make this one again! Excellent with vanilla ice cream and sprinkled with powdered sugar! Yummy! Thanks for sharing this recipe!

Spinach and Strawberry Salad

Great! Used baby spinach for a faster recipe. Added fresh blueberries too! Used a raspberry vinagrette from Trader Joe's and some chopped walnuts. Nice combination!

Old Fashioned Prune Cake

Delicious cake! I reduced the sugar to a cup. For the glaze, I used agave nectar instead of the corn syrup and 2% milk since I didn't have buttermilk on hand. I blended the glaze to take out all the lumps and it was great! I enjoyed the cake plain sprinkled with a little powdered sugar. My family likes it with the glaze.

Honey Wheat Bread I

Excellent! The best homemade wheat bread recipe I've found so far! I think the secret is the evaporated milk and baking it with the pan of water underneath. Definitely worth the wait and work! Delicious! Thx for sharing!

Nice & chewy! Too sweet! Next time I'd use 1/4 c. brown and white sugar. I used 1/2 c. both white and brown sugar this time and it was still too sweet for me. But it was very tasty and coworkers are asking for the recipe!

Banana Banana Bread

Extremely moist! Must say, the BEST banana bread recipe ever! I definite keeper! Added 1 Tbsp vanilla extract and approx 31/2 large very ripe bananas. Great recipe when you have too many overriped you don't want to waste! Thx for sharing!

Broccoli and Cauliflower Casserole

Great recipe. Made the following changes: all cauliflower, real cheddar cheese, garlic and onion powder, water chestnuts used La Choy Chow Mein noodles for topping and more cheddar instead of crackers! Turned out great with lots of flavor and crunch!
