DELICIOUS!! I tried this recipe for a potluck Christmas dinner. I followed this recipe along with tips from other users. I used 4 medium sized sweet potatoes, which even after 50 minutes in the oven at 375 were not quite finished. I finished them off in the microwave for 5 minutes each. Despite what people said, I found it extremely difficult to get the peels off after baking (I have never cooked them before so I may have been doing it wrong). I substituted milk for evaporated milk, I doubled the vanilla and the recipe for the pecan topping. I only used 1/4 cup of sugar for the potatoes, and they were still very sweet. I used the Magic Bullet to blend the sweet potatoes to a smooth texture before adding to the dish. Aside from struggling with the peels at the very last minute, this recipe was pretty easy to make and easy to do on a student budget. It went over so well that I didn't even get to bring any leftovers home!
