Mom's Zucchini Bread

I found this to be very dry, and there's not a lot of zucchini taste in it - I like a bread that's much moister and has a stronger flavor. I'm going to try editing my favorite whole wheat banana bread recipe to make a zucchini version and see how I fare with that one!

Buttermilk Syrup

Make it with brown sugar for a caramel-y taste that's to die for. I love this syrup and we hardly ever use "regular" syrup anymore, this is even better.

Whole Wheat Banana Nut Bread

This bread is fabulous - healthy and moist and just really, really yummy. I add some cinnamon and nutmeg to mine, for a little extra flavor, and sometimes as many as 2 cups of bananas - which makes it even moister and more flavorful. I discovered this recipe a week ago and I'm making it today for the third time - it's that good!

Easy Microwave Chocolate Cake

This was good for a quick chocolate fix, though I would have loved for it to be more chocolatey. I think I would increase the cocoa powder (and perhaps the sugar) a little if making it again.

Crustless Spinach Quiche

I think that this is the best quiche I've ever had! I love the green color so much, too. I did modify it some - we didn't have onions, and I put in two cloves of garlic to cook with the spinach. I think I used a little less cheese, too, and I added a whole wheat crust. To add to the green color, we pureed the whole mixture a little to really mix in the spinach. We'll definitely be making our version of this again!

Strawberry Dream Cake I

I only made the frosting to use on a different cake, so I'm only rating that - but it was AWESOME! Everyone loved it - it was like amazing fresh strawberry Fluff. My aunt and sisters kept sticking their fingers in the bowl to "taste" a little more. Plus it was a gorgeous pink color. Definitely a keeper!

Very good and moist, but it was definitely hard to tell when it was cooked. It looked fine, but then I took it out and it dripped all over my cooling rack. :( Great flavor, though!

Coffee Frosting

Very, very, VERY sweet and not incredibly chocolatey. Also, if you're into presentation, the color is a little light because it's mostly sugar, so it doesn't look as stunning as a really chocolatey frosting would. It's definitely more a children's frosting than an adult one. I only made half the recipe, and I added a little extra milk because mine came out a little too thick, but otherwise followed it exactly. I would make it again, but I might tweak it to add more chocolatey-coffee flavor.

Butterscotch Cake I

I was a little skeptical about the idea of butterscotch cake, but it was requested for a birthday, so I tried it out. I didn't do the butterscotch chips and I did use frosting instead of sugar, but otherwise followed the recipe, and we LOVED it! Even my husband, who says he hates butterscotch, had two pieces. It was SO moist and good. And no one will realize you cheated and used cake mix, either, it tastes that decadent. : ) Great recipe, thank you so much!! I'm tweaking this to make chocolate cake for a party tomorrow and hoping that will come out just as good.

Grain and Nut Whole Wheat Pancakes

These were awesome!! My 3 year old and I loved them and now we know how to make oatmeal flour. :) Thanks for the great recipe!! Oh, we did make two changes - we used skim milk because that's all we drink here (thus reducing fat/calories significantly), and we made buttermilk out of skim milk with a dollop of apple cider vinegar - my mom's trick that I always use.

Caramel Shortbread Squares

OH MY GOD! These are SO fabulous - I had tons of compliments on them last Xmas, and they are first on my baking list for this year. Fabulously good and easy - though I did end up burning the sugar a little and had some little burned bits in my caramel (no one minded, though!)

Seminole Pumpkin Bread

It was okay, but I wasn't a big fan. It was pretty bland and the dough was very sticky, so that it was hard to make the balls to fry. Mine didn't really puff up that well and ended up doughy in the middle (my fault, though, I'm bad at frying things). I added some spices and a dollop of molasses to addd some flavor, but it didn't help that much (and probably helped the dough become even stickier).

Vanilla Brownies

Very good - the batter tasted a lot like chocolate chip cookie dough, but after baking the brown sugar gave them a more caramel-y taste that was fabulous. (Plus my son dumped in extra vanilla which gave them a strong vanilla taste!) I baked them in a 9x13" pan for about 35 minutes or so, and they came out perfectly - a little crisp at the edges and a little softer in the middle, just like bar cookies should be. Fantastic recipe, thanks! :)

Rhubarb Cobbler

Easy and delicious. I'd definitely double the filling next time, there wasn't enough in comparison to the amount of topping. I used 2 c apples and 2 c rhubarb, because I hadn't picked enough rhubarb, and it was really good that way (used a few Tbsp sugar instead of the 3/4 c). We had vanilla ice cream on top, too - I highly recommend adding that!
