Sweet Potato and Black Bean Chili

This recipe is superb! Used a mixture of orange & purple skinned (yellow inside) sweet potatoes called kumara in New Zealand where I'm from. Used two cans of Delmaine Black Beans in Chilli Sauce plus two cans of diced tomatoes so only added 1 tsp chilli flakes & third of a sachet of taco seasoning. Cut the cumin down to 1 heaped tsp. Other ingredients the same but different brands. What a beautiful, velvety chilli! The prep is worth it but have made it ahead of time to get all the flavours when friends arrive tomorrow night. Will serve with steamed rice & salad. Omitted the sugar & water. Thankyou Chef John.

Broccoli Crunch Salad

I cut the broccoli small. Use half a cup of mayo. Can use pine nuts instead of the almonds. Delicious!

Tuna Broccoli Roll Up Casserole

Made this recipe with tinned salmon. It's delicious! Used what I had on hand. Garlic chapati's, low fat condensed mushroom soup, trim milk, fresh steamed brocolli & low fat cheese (edam) & steamed onion rings. Baked without the foil until cheese was bubbling then covered with foil & lowered oven temperature. My husband thought it was a fish pie! Very tasty! Healthy too!

Colleen's Slow Cooker Jambalaya

I had to 'tweak' this recipe but turned out great. Used a 410g can of diced tomatoes & 2/3 cup of tomato paste. Omitted the shrimp & used chopped ham instead. Cooked rice separately then added to slow cooker when everything else was done & set on low with lid off until the right consistency. Enough for two meals for two people. Delicious!

Cheesy Squash and Zucchini Casserole

Made a low-fat version of this recipe. 1 egg, third of cheese/used edam, low fat plain yogurt & trim milk. Omitted sugar, salt & substituted low-fat margarine for butter. Added half a tsp nutmeg & used focaccia breadcrumbs over the top. Yum!

Spanakopita (Greek Spinach Pie)

Used Swiss Chard (white stemmed variety) called Silverbeet in New Zealand. Used low fat cottage cheese instead of feta. No nutmeg so used dash cayeene, Baked as a pie & it's a no fail recipe.

Fettuccini with Basil and Brie

This is amazing! Used tri-coloured fettuccini, already cooked (tomato, spinach & egg) which only took 4 mins to cook. Used twice as much parmesan & fresh corn kernels. Delightful to look at & delicious!

Slimmers Pumpkin Soup

Taco Pie

Had to improvise as no crescent rolls available in NZ. Used corn bread wraps to line the pie followed by cooked beef mince with taco seasoning. Next layer was refried beans (435g can) then a medium jar of salsa dip. Used low fat philadelphia cream but only a third of original recipe. Topped with broken corn chips & grated edam. Very tasty!

Chicken and Pumpkin Lasagna

I omitted the chicken & instead made a mash of steamed pumpkin, sweet potato (kumara in New Zealand). Then mixed in some steamed broccoli. Truly a pumpkin lasagna, yummy!

Easy Weeknight Beef Stroganoff

Potato and Shiitake Mushroom Gratin

Used white portobello mushrooms.Didn't use any cream. Top layer was sliced edam cheese sprinkled with parmesan cheese. Used a dessertspoon of butter cooking the mushrooms. The dish turned out delicious with a lot less cholestrol/fat.
