Sweet Potato and Black Bean Chili
This recipe is superb! Used a mixture of orange & purple skinned (yellow inside) sweet potatoes called kumara in New Zealand where I'm from. Used two cans of Delmaine Black Beans in Chilli Sauce plus two cans of diced tomatoes so only added 1 tsp chilli flakes & third of a sachet of taco seasoning. Cut the cumin down to 1 heaped tsp. Other ingredients the same but different brands. What a beautiful, velvety chilli! The prep is worth it but have made it ahead of time to get all the flavours when friends arrive tomorrow night. Will serve with steamed rice & salad. Omitted the sugar & water. Thankyou Chef John.

Tuna Broccoli Roll Up Casserole
Made this recipe with tinned salmon. It's delicious! Used what I had on hand. Garlic chapati's, low fat condensed mushroom soup, trim milk, fresh steamed brocolli & low fat cheese (edam) & steamed onion rings. Baked without the foil until cheese was bubbling then covered with foil & lowered oven temperature. My husband thought it was a fish pie! Very tasty! Healthy too!

Colleen's Slow Cooker Jambalaya
I had to 'tweak' this recipe but turned out great. Used a 410g can of diced tomatoes & 2/3 cup of tomato paste. Omitted the shrimp & used chopped ham instead. Cooked rice separately then added to slow cooker when everything else was done & set on low with lid off until the right consistency. Enough for two meals for two people. Delicious!
