Yummy!! Thanks! This is the most tender oven chicken I have had in years! We live in high desert(4200 ft.) so some of my recipes seem dryer,etc. I had read many of the reviews & took a few suggestions from them too. I floured the chicken,dipped in butter & garlic & then the dry mix. I had no crumbs so used 99 cent pkg of home style garlic & butter croutons-crushed & sharp cheddar cheese. My pkg of chicken was 2.25 lbs. so I did not have much butter left over to drizzle & just a little of crumb mix--did add what I had & took advice from one reviewer...sprinkled a little extra cheese on for the last 10 minutes. One reviewer complained about the greasy bottoms, but mine were not that way..maybe because of more chicken. I did notice that the butter was sinking to bottom as dish cooled--my suggestion--lift the pieces out of the baking pan & put them on a raised rack for a little bit. Note: using the garlic & butter croutons that I had on hand gave the dish an extra garlic zing! I am a taster cook & was checking the chicken to make sure it was done--well, I kept eating that piece of chicken til' it was gone! lol. Thanks for the recipe..I am passing this one on to a few women--who still cook! ( I am senior citizen & have been cooking & baking since I was 8yrs old.) The last few years I have not been able to stand so long on kitchen floor to cook & bake...I loved to cook & bake for people who enjoyed my efforts.
