Homesteader Cornbread

Reviewed: Sep. 12, 2010
This turned out nice. It is dense but good and has a great crust. I only used 3 TBSP of sugar. I also added a bunch of fresh chopped sage and chives. I was thinking of using it for stuffing. It would make a nice herbed bread with dinner though with a nice flavoured herb butter (maybe a little dill in the butter)

Excellent. I do recommend cutting down the amount of chili powder by about half. We loved this recipe.

Peanut Butter Cookies IV

Reviewed: Sep. 16, 2006
The peanut butter flavour is too weak but not bad. The texture however is not good at all. I would not make these again.

Gourmet Sweet Potato Classic

Reviewed: Mar. 27, 2005
This was a huge hit with my entire family. I used milk instead of cream, about 1/2 the amount of white sugar and used ground pecans instead of chopped. Excellent recipe!

I use 'old cheddar'. They never turn out bland.

Cranberry Pistachio Biscotti

Reviewed: Nov. 28, 2004
I've been throwing out many BAD cookies lately. I made a batch of these yesterday and LOVED them. I made a second batch today. The only change I made was that I gave the exterior an egg wash with the yolk of an egg for shine and color. I will make these every year! My friend is a pastry chef and said that they were superb.

Chicken Newburg

Reviewed: May 2, 2004
A nice simple meal. I substituted Marsala wine for Sherry. I also added some frozen peas. I would use less salt or none at all next time since the chicken broth had enough salt in it.

Pork Chops and Sauerkraut

Reviewed: Mar. 2, 2004
I loved this recipie. I seasoned the pork chops with garlic powder, onion powder, caraway, pepper and a generous amount of paprika. For the suakraut. I used bottled sauekraut, but first drained and rinsed it well and then put in a pot with just enough water to cover. I added pieces of fried bacon (about 4 slices), caraway and pepper and simmered it for a while, then I thinkened it up with a cornstarch slurry and then topped the pork chops. This is the BEST way to have sauerkraut!!!! I browned the meat first then baked for 40 minutes at 350. A great meal.

Knedliky - Czech Dumpling with Sauerkraut (Zeli)

Reviewed: Mar. 2, 2004
Please be sure that the bread cubes have been dried out. They should be hard. Sauteed onions should also be added to the sauerkraut.

Baked Pork Chops I

Reviewed: Feb. 21, 2004
I was really excited about this recipie after reading such great reviews but we really didn't enjoy it. My husband scraped off the breading and sauce. He usually cleans his plate...but not this time. I ate most of mine but was not impressed. I will not make this again.
