No Bake Cookies III

Delicious as always! I followed the advice of other reviewers and boiled a little longer - about 2 minutes. I was a little worried, since I live at a higher altitude, but these set perfectly.

Asparagus Chicken

We really like this. People always ask me for the recipe. We don't use as much cheese and usually don't keep the meat in the marinade for the full two hours, but it still has a nice mixture of flavors.

BBQ Pork for Sandwiches

We didn't like this at all. It was really bland. Maybe it was our barbeque sauce, but we've had much better. We didn't even eat the leftovers.

Belgian Waffles

My husband and I agreed that these are so much better than the boxed Belgian waffle mix! Even if they are more time-consuming, you should try them at least once. I was trying to cut the recipe in half at midnight and messed up on the eggs, so I didn't add the egg yolks and they were still great! They turned out nice and crispy, but tender on the inside - perfect! I did find that these tended to cook at a little lower heat than regular waffles in our Belgian waffle maker.

Champagne Chicken

Normally if something has four and half stars on this site it is pretty good. However, I saved this recipe for Valentine's Day and it was NOT worth the wait. I followed the advice of other reviewers and that didn't seem to help it much. It was just chicken that tasted a little bit like champagne. Very boring. My husband and I were both disappointed - the leftovers will be turned into something much better. Don't waste your time with this one!

Oatmeal Raisin Cookies IV

Yum! These are great…we can’t stop eating them. We just moved to Denver and I’m experimenting with this new high-altitude cooking: I ended up adding an egg, 5 tablespoons of milk, and raising the oven temp. to 370. I baked them just under 10 minutes and they turned out very soft and chewy. I will be making these again – but adding more raisins next time!

Jamie's Minestrone

Everyone I have served this soup to has loved it! We always double the recipe – it is great to pack up and take for lunch. I add some diced tomatoes and skip the spinach, but other than that stay pretty close to the original. Also I use ditilini pasta instead (sometimes called salad macaroni) because that is the type of pasta in the minestrone at the Italian restaurant I worked at. I think it works a little better in a soup than the seashells. Delicious!

Mike's Homemade Pizza

I haven't tried the dough, but the sauce gets five stars from my family! We make the dough from another recipe on this site (Jay's Signature Pizza Crust). The sauce is very good - adds just the right touch to the pizza. We always substitute olive oil for the vegetable oil and skip the cumin. We have also found that making a single serving of it is not enough for two pizzas, but doubling the sauce makes quite a bit more than you need.

Bob's Mexican Stuffed Chicken

Yum! My husband and I loved this. We made it with tortilla chips rather than the cornflakes, as suggested by other reviewers. We also used fajita seasoning that my husband makes himself. It smelled wonderful while it was baking and tasted even better. It was worth the prep time - I will definitely be making this one again.
