Strawberry and Feta Salad

Really good! I used garlic powder instead of fresh garlic in the dressing, and about a third of the oil called for. Also used olive oil instead of vegetable. A good, refreshing combination, sweet but not too sweet. Thanks!

Cabbage Roll Casserole

This was quite good! I do think the tomato sauce needs some seasoning, though (thus the four stars). If you have a favorite stuffed cabbage recipe, use that. I wasn't ecstatic about the combination I came up with this time - I added too much paprika - but I'll keep trying. I used veggie crumbles instead of ground meat, one bag of coleslaw mix and most of a bag of leftover sauerkraut (I know, totally not in keeping with the recipe, but it's cabbage, and I had to use it somehow). I also used brown rice. I cooked it all in the slow cooker, on low for 7 hours. It turned out really well! I'd like to try and make it in the oven sometime, but this wasn't the time. I will say that actual stuffed cabbage is far prettier than this, but I'm certain that we'll make this again. Thanks!

Grandma Ople's Apple Pie

The nine millionth review for this recipe! Oh well. It really is very good. I added just a bit of vanilla to the sauce, and used apples I'd cut and frozen last fall (I have no idea what kind, but they were red). I used all my butter in the crust and had to use margarine for the sauce, which definitely made it not quite as good as it would have been, but I also think next time I might use slightly less white sugar and slightly more brown, to add to the caramel flavor. Thanks!

Vegetarian Sweet and Sour Meatballs

The meatballs were fairly good, but kind of tasted like seasoned breadcrumbs, even though I halved those. Which might have been okay except for my second issue, which was the sauce. Like others, I tried to cut the ketchup. Honestly, while I totally understand the urge to do so, I wouldn't recommend it: you don't end up with enough sauce. You just don't. Also, the sweetness of the ketchup cuts the vinegar, and you need that if your meatballs are going to be sweet and sour and not just . . . sour. Having said that, this is clearly the result of my modifications to the recipe, and not anything to do with the recipe itself. I think that if I'd followed the instructions on the sauce, the bread-crumb flavor of the meatballs might have been masked a bit. So I'll probably try this recipe again - as written, this time!

Burger or Hot Dog Buns

These were okay, but a bit bland (an issue I often have with homemade yeast breads, so maybe it's somehow me). They were also a bit dense, but froze well, and looked beautiful. Might try again with more sugar/salt and a bit more yeast. Thanks!

Citrus-Basil Vinaigrette

Good, simple! Nice sweetish vinaigrette. Not totally won over by the basil flavor, but I am coming to realize (thanks mostly to this recipe) that I'm not nuts about sweet+herbal. Will keep this in the recipe box just in case, though. Thanks!

Sweet Sausage 'n' Beans

Pretty good, but it mostly tastes like baked beans. I used tomato puree instead of ketchup, and slightly less of it (because the puree isn't as thick as ketchup). We added some Frank's Red Hot at the table, and that improved it a lot. Not sure we'll make again; easy and a great assortment of veggies, though! Thanks!

Creamed Eggs on Toast

I cut this in half and used a mixture of whole evaporated milk (I had an open can to use up) and skim milk - it's great! Very warm and satisfying. I've been eating the leftovers for breakfast. Thanks so much!

Orange Beef-Style Tofu Stir-Fry

I made the tofu differently, so I'm not reviewing that, but the orange sauce is killer, even though I had to leave out the chili paste! I used fresh orange juice, and didn't have any trouble with bitterness. Thanks!

Great-Grandmother Steinbeck's Johnnycake (Cornbread)

Loved this - used yellow cornmeal and powdered buttermilk and water. Four stars instead of five because the baking time is way off; others seem to have had the same problem! Mine was a breath away from being overdone at not quite twenty minutes. Next time I'd start with 15, or lower the baking temp. Fabulous flavor, though, and just sweet enough! Thanks!

Mexican Rice III

Great! This isn't the red rice you sometimes see in Tex-mex joints, it's the, uh, non-red rice you sometimes see in restaurants that are more Mex, less Tex. But every restaurant has its own rice, so why waste time arguing about authenticity? It's good, flavorful and mild (I left out the jalapeño; small child) and a great foil to whatever you're serving. Will definitely make this one again, thank you!

Slow Cooker Chicken Mole

I had to leave the chipotle out of this for my preschooler, so it was a bit bland - not the recipe's fault! I think I would decrease the tomatoes; the sauce wasn't as rich as I was hoping for. Still, pretty good. We ate it in tacos and I think we'll freeze the leftovers to use in enchiladas. Probably won't make again, though. Thanks anyway!

Greek Tzatziki

Good! Exactly what I was looking for. I'm not positive that the olive oil is necessary. I used Greek yogurt and cut the recipe by at least a half, adding the ingredients to taste but more or less in the proportions recommended. Thanks!

Southwestern Vegetarian Pasta

The combination of the tomatoes and corn was nice, but I felt like the chick peas were a little random. Black beans might be more suited to the flavors. I had to cut the chili powder in half because I'm cooking for a three year old; I'm sure it would have been more flavorful had I used the whole amount, but I also think the chili powder might have drowned out the tomato and corn flavors, which I liked a lot. Overall, this was fine, but not spectacular, and I don't think I'll make it again. Thanks anyway!

Kay's Spaghetti and Lasagna Sauce

Very good! I used Italian-seasoned ground turkey and pureed tomatoes, and skipped the blender. I let it simmer for around an hour. Needed quite a bit of salt, but that depends on how much salt is in your tomatoes. If you make it with turkey, you'll end up with a lot of water that needs to be cooked off/drained before you add the tomatoes, so allow time for that. (This is the nature of ground turkey, in my experience, and nothing to do with this recipe.) I used the full amount of sugar and didn't find it too sweet, or sweet at all - nice and mellow, but not sweet. Thanks!

Simple Mexican Rice

Totally absolutely decent, but not mind-blowing. I had to cut down on the spices a bit because I was feeding a three-year-old, and I realized too late (like, five minutes ago) that I should have used short instead of long-grain rice. Which probably made a difference, and I wish I'd noticed that before! I do like the tomato paste. There are so many mexican rice recipes out there, though, and - even taking into account my errors and changes - I'm not sure this is The One. Thanks, though!

Delicious Black Bean Burritos

Yep, delicious, despite all my best efforts. Decided to double the recipe since there are three of us, but only had one can of black beans and no red peppers. So I added a can of pinto beans and a tomato instead of the pepper. I also added a half a cup of chicken broth and simmered for a good five minutes or so because we like our beans well-cooked, then mashed them a bit. Added half a bag of baby spinach and forgot to double the cream cheese. Was the end result quite jessie's recipe? Probably not, but I don't think any of my changes dramatically altered the nature of the dish. The cream cheese, which is her real innovation, makes this. They were delicious, indeed, and crazy easy. Thanks, this is going into the "make again" folder!

Asparagus 'Guacamole'

This was better than I expected, particularly after it sat for a while. It wouldn't be terrible at a party, where lots of people were each eating a little of it, but with just the two of us we didn't make much of a dent. It's missing the smoothness of real guacamole, of course. I added some onion salt.
