Poached Pears

I made these when my parents came to dinner and my dad said they were the best pears he ever had! I added a little splash of grand marnier to the chocolate and it was fantastic.

delicious. i only had the champagne of beers (ha!) on hand so i can't wait to try it again with dark beer added. i thought this was the perfect balance of spicy and sweet.

Baja Beef Soft Tacos with Lindsay® Olive-Chipotle Salsa

these were killer! i loved them. my family said they were too hot, but i was not able to find canned green chiles or the chipotle in adobo, and just chopped up some serrano peppers, so i'm sure that was the culprit. but this is an awesome recipe that i have played with a few times since then to accomodate my family, and it's been a winner every time.

Cranberry Chicken II

I have to say, I'm a little surprised by all the rave reviews here. This recipe was ok, and it smelled AMAZING and the chicken was very juicy and tender, but the sauce was very thin (almost more like juice!) and way too sweet. Maybe that is because I used leftover homemade cranberry sauce, rather than the canned variety, but I don't think that's it. I'm considering trying again with cream of onion or cream of mushroom soup in place of the onion soup mix, just because I have so much leftover cranberry sauce to play with. Final verdict- edible but disappointing.

The Best Rolled Sugar Cookies

yum! per the suggestion of another reviewer, i added a tiny bit of lemon zest and i think that was the perfect touch. a few things i would mention, i did two different batches, one with large eggs and one with extra large eggs. the batch with the extra large eggs was a lot more moist and i had to add some flour to the recipe and flour the rolling surface a lot more often than with the other batch. and also, when baking on a regular metal non-stick baking sheet, the cookies came out perfectly after 6 minutes (at 400 degrees) but when i used my pampered chef cooking stone, they needed to go for 8 minutes.

Sesame Tilapia

this is SO bad. the combination of flavors was kind of intriguing to me, and curiosity killed the cat. the sesame and the italian seasonings do not blend well at all, and the extra time marinating really just left the fish soggy. this recipe was a waste of time and tilapia.

Beer Roasted Lime Chicken

the chicken was very good, but i don't know if i'd say it was worth the trouble or the wait (i had to cook it much longer than the recipe, closer to 2.5 hrs)... it was good but i won't be making it again.

Easy Sugar Cookies

the texture made me nervous at first, the dough seemed very crumbly and i was worried that it wasn't going to roll out well because i'd planned to use cookie cutters. but i added a few tablespoons of water to the finished dough, separated it into two balls, wrapped them in saran wrap and then put it in the fridge to chill for about 45 minutes. the final results were delicious. also, i pulled my cookies out at 7 minutes just to be on the safe side and they came out perfect. that my just be my old, finicky oven though!

Slammin' Salmon

i hate to say, this recipe is not slammin'. maybe i let it marinate too long (20ish hours? it was under 24), but even using low-sodium soy sauce this was wayyyy too salty. the rave reviews make me want to try again but i will not let the fish marinate as long and i will likely add some honey to temper the saltiness. two stars for being easy and smelling quite promising.

very good. the mixture was really thick so i had to add water so it could simmer. it was also very sweet so i added a little bit of vinegar and some frank's red hot sauce to offset the sweetness

Lime Chicken Soft Tacos

SO.GOOD. i marinated the chicken in the sauce (doubled the recipe) for about an hour before cooking. it was tangy and delicious. i did leave out the oregano, and added just a bit of crushed red pepper and cumin, per the suggestion of other reviewers. i'm using the leftovers to make tortilla soup so i can get a little more mileage out of this awesome recipe!
