Chicken Pot Pie IX

Amazing chicken potpie. I added another 1/4C each of chicken broth and milk or else it would have been too dry. Husband (who doesn't particularly like meat pies) loved it. Will definitely make again. Makes great leftovers for work as well. I also pre-baked the bottom crust so that it wouldn't get soggy-about 5min at 350. The top crust got a little burnt at the edges only, but it was my first time making this so maybe I'll try a lower temperature and bake a little longer next time.

Shrimp Scampi Bake

Just made this tonight. I didn't realize shrimp scampi could be so easy and fast to make. Followed the recipe exactly but added an extra 1/2tsp of garlic and parsley to the dish. I also added pepper and paprika on top after baking. I served it over spaghetti.Will definitely be making this again.

Neapolitan Cupcakes

Tasty. Didn't make the frosting as I thought that the cake and brownie combo would be sweet enough. I ended up making 18 cupcakes with 1 strawberry cake box and 1/2 brownie mix box. The recipe doesn't adjust very well, but you can eyeball how much extra mix you need to make if you run out of one like I did.

Healthy Turkey Loaf

Very good, definitely took more than 25 min to cook though. I used 1lb of ground turkey and it took 45min at 375. I was worried about the recipe being too bland so I added cumin, oregano, garlic, worcestshire sauce to the meat mix and a glaze of ketchup/mustard/sugar on top of the loaf before baking. My only issue with the final product was that there was quite a bit of liquid in the pan after baking, not sure how to fix that. Overall very good and will definitely make again.

Mom's Favorite Baked Mac and Cheese

It's basic and cheap to make but not very flavorful. I left out the onion because I don't like onion, but the rest I kept the same. I was amazed that for the amount of cheese I used, the sauce didn't taste very cheesy. Not worth the calories until I can figure out how to make the sauce better.

Salmon Chowder

The base (?) is amazing. So creamy and delicious. I made the mistake of keeping the skin on because I didn't want to wast anything. Huge mistake. The salmon skin made the soup way to "fishy". I really like fish but keeping the skin on made the smell too strong. I feel like the broth would work very well with chicken and dumplings as well. Will make smaller portions next time so I don't get sick of it. Almost forgot, this soup doesn't keep well-you can't freeze it because there's milk in it and even kept in the fridge the milk begins to separate after 2 days.

Mexican Grilled Corn

I don't have a bbq so I used boiled corn. I also didn't have the special cheese. This recipe was still delicious. So happy I stumbled across this. Will definitely make again.

Best Ever Meat Loaf

This really is the best meatloaf I've ever had. It reminds me a bit of In n Out burgers. My fiance agreed that it's better than meatloaf he's had at expensive restaurants. I used 1 lb instead of 1.5 lbs of meat and kept the rest of the recipe the same. The final product was phenomenal taste-wise, but there was quite a bit of liquid in the pan when I took it out of the oven. Anyone have tips for this? My other user error was that I should have chopped the onion a little more finely and maybe use less onion since I cut back on the meat. Definitely will make again.
