Probably doubled the bacon, mixed the butter and milk into potatoes and added a bit more salt. I LOVED it! Very, very delicious and will make again for any time, not just St Patty's Day!

Guinness® Corned Beef

Used exactly what recipe called for, 1/2 the seasoning packet that came with the corned beef and cooked in crock pot. EVERYONE loved it!! Thank you for such an easy and delicious recipe!

It was tasty but I probably wouldn't make again as is. I might try that one suggestion of adding cheese and baking it! It was good but I guess based on reviews I expected to be blown away.

Mushroom Sauce Baked Pork Chops

Yum! I liked the idea of prepackaged hash browns but I had potatoes to use so I shredded them myself. Followed directions as far as other ingredients and cooked potatoes a total of 1 hr, pork chops only 40 minutes as they were thin. VERY GOOD! Thanks for sharing!

Turkey Pot Pie

Got this recipe out of the Allrecipes cookbook. Usually I like reading reviews before trying a recipe but didn't get around to it. I don't care of celery so instead used 3 small carrots and 4 smallish potatoes to make sure I had enough filling. I followed the rest of the recipe pretty much to a T and it came out delicious!! Now that I've read the reviews, the only thing I'd do different is bake the bottom pie crust for a few minutes before adding the filling. Thanks for a great recipe! My daughter's first exposure to pot pie was a hit!!

Simple Hamburger Stroganoff

Baked Garlic Parmesan Chicken

With my modifications, it came out perfect! Used 6 chicken breasts. Was out of italian breadcrumbs so used chicken flavored stove top stuffing crushed well. Used 4 tbsps of olive oil and 2 tsps minced garlic. Put chicken breasts in a ziplock bag, added garlic, oil mixture, added 2 tsps adobo, 1 tsp each of salt & pepper, mixed well. Dipped the chicken pieces in the crumb/parmesan cheese mixture and baked for 40 minutes at 350 degrees. I've made similar recipes and they've lacked in flavor - this is the first time the flavor was perfect (in my opinion!) so I made sure to write it down this time!! This is one of those great recipes that is perfect for altering to your preference. Thanks for sharing!

Cocktail Meatballs IV

Used the sauce ingredients and Armour meatballs. So easy and everyone loved them! It was hard to stop eating them they were so tasty and it just doesn't get any easier. I think the hardest part was finding chili sauce! Thanks for sharing!!

Best Black Beans

Five stars with the changes I made. Didn't add cayenne (didn't have) and was out of garlic. Seasoned with adobo and added 1 small can of tomato sauce. SO good!! Tasty recipe that can be easily be altered. Oh and I agree with letting it simmer for two or so hours. Really brings the full flavor through.

Pumpkin Chocolate Chip Cookies III

YUM! Doubled batch and made 1/2 with choc. chips and pecans, other 1/2 with macadamia nuts and white choc. chips. Cook a bit longer if using baking stone. Gave this recipe out several times and EVERYONE loved them. My favorite version was the white chocolate with macadamia nuts which is what I'll be making again and again.

Kathy's Roast and Vegetables

I browned on all sides but not for 20 minutes due to time constraints. Had no carrots and it cooked for 9 hours (while at work), stirred twice. This was so good, so easy, the roast was so tender. I took the potatoes and mashed them up (used what I had - russet) and served "mashed" potatoes with that yummy gravy. Will make this one again and again!

Salmon Chowder

This was soo good! I didn't follow exactly which is why I gave 4 stars. I took some other reviewers suggestions and used low fat evap. milk and only 1 cup of cheddar. I also omitted the celery (personal preference), used a bit more salt at the end and threw in about half cup of crab meat I happeneded to have. My daughter said it was delicious!! I'd have to agree.

Cake and Ice Cream Cake

So I took some liberties but stayed true to the concept (kinda). I decided to use the vanilla creme cake and purchased Blue Bell vanilla ice cream (boy am I glad it was on sale, so good!). I cut the pound cake into three layers. Layered with cake, ice cream, cake, ice cream and last layer of cake. Froze to firm up the ice cream. Then I spread cool whip like icing all over cake and added decorations (was my daughter's birthday cake). EVERYONE not only loved it but were highly impressed that I'd made it! The cool whip hide the fact that it looked messy due to my imperfect technique (first time doing something like this). It came out so delicious and easy!! Next time I'll try the chocolate creme cake and rocky road ice cream. The possibilities are endless!

Tender Italian Baked Chicken

So good! Five stars with added spices. Made half mayo/cheese mixture which was enough for 3 breasts. Added onion powder, kosher salt and pepper. Everything else exactly as listed. My daughter declared it her "favorite chicken!" Thanks for sharing!!

Baked Scalloped Potatoes

With my changes I'd give it 4.5 stars. I halfed recipe (only me & my daughter). Added 1/2 cup sharp cheddar cheese to ingredients. Left potatoes unpeeled, and thinly sliced them. Mixed 1/2 can of cream of mushroom soup with 1/2 can of whole milk. Sauteed 1/2 diced onion in a pat of butter. Used 1/8 tsp pepper & 1/2 tsp kosher salt. Layered as follows: 1/2 of everything - potato slices, seasoning, onions, soup mix, cheese, repeat and cooked for listed time & temp. My daughter loves 'em and I was happy with recipe. Wanted a scalloped potato recipe that wasn't swimming in cheese so this had the perfect balance for me.
