Pat's Potato Salad

Followed recipe to a T. I didn't have time to do it all the day before so I put all of the dressing ingredients together the night before so the flavors had time to get right. The next evening all I did was boiled the potatoes, cooled and cubed and added dressing. It was SO GOOD! Kept getting compliments so very, very happy with recipe. This will be the only potato salad recipe I use from now on. Thanks for sharing!

Chicken, Feta Cheese, and Sun-Dried Tomato Wraps

Fantastic recipe!! I wonder if the user who had a problem with the dressing used a vinaigrette? Make sure you pick up the sun-dried tomato dressing which is NOT a vinaigrette because that's what I did and this recipe was awesome. Oh and easy too! Can't beat that.

Breakfast in Minutes

I didn't have ham and I used butter instead of oil for the potatoes. I wasn't sure if I was supposed to keep stirring once I'd added the eggs or let it set. I ended up letting it set but think it'll be much better if I had kept stirring which I'll try next time. Not perfect but a good recipe helped me provide a last minute non-cereal breakfast! Thank you.

Tuna Ball

I've made this for two different social occasions and it's always gotten devoured. It's better when it can get to room temperature (not outside at a cold weather oyster roast!) but regardless it's super easy and SO GOOD! I like to make the mixture and give it a couple of hours for the onion flavor to meld with the cream cheese which really adds flavor. Then I'll add some salt and pepper to taste and refrigerate one last time before rolling in the nuts.

Roasted Brussels Sprouts

First time trying brussel sprouts! I've now made them twice in two weeks using this recipe. First time I didn't boil them, 2nd time based on other reviews I did boil for two minutes which did serve to remove quite a bit of bitterness. The best part for me was the crispy random leaves that cooked with it so I think next time I'll go one step further and maybe cut the sprouts in half and loosen up the leaves. Tasty and very simple recipe!

Yellow Squash Dressing

I like the idea. I'd made the cornbread as muffins. I added more cornbread (two muffins) and 1-2 eggs and it baked up more firm which I preferred. My daughter HATES yellow squash but ate this. Her only complaint was it was too sweet and although I didn't think it was too sweet, I will make a savory version using this concept next time. Thanks for sharing!

Corn Dog Muffins

Yum! I too halved the recipe. Instead of hot dogs I bought a Hillshire Farm sausage (lite) and used about half. I cut into thick slices and then quartered and added about four chunks to each muffin. Didn't have brown sugar so had to use regular sugar, everything else the same. Cooked for 18 minutes total and it made 12 muffins. SO GOOD!!! Great compliment to any soup (ate with lima bean soup).

Six Can Chicken Tortilla Soup

Using Molly-Molly directions EXACTLY this soup came out fantastic!! My sometimes picky daughter had to be stopped because she wanted a FOURTH bowl of soup! So tasty and so easy. Perfect!

Best Tuna Casserole

This came out really tasty! Here's what I did differently. I had canned salmon (15oz) so I used that. Added about 1/2 cup of sour cream, forgot the onions and insteads of peas and mushrooms used about 1.5 cups of frozen mixed veggies. Since I used sharp cheddar and regular cream of mush. (instead of reduced sodium) I only added pepper. The only salt that I used was in the water for the pasta. It didn't need any added in the dish itself. Great comfort dish!

Primavera Noodles

No green pepper and used a lot more broccoli and carrots; also added chicken to make it a one dish meal. This was pretty darn tasty, very easy and my daughter gobbled it all up, including most of the mushrooms which she doesn't like! Although I love onions, next time I think I'll add peas instead of onions. Thanks for sharing! Oh and I cooked the carrots and broccoli as the recipe stated and it came out perfect!!

Carrie's Catfish Larue

I was hesitant to try it, but I'm glad I did! So good I shared with my mom. Anyhow, minor changes due to what I did or didn't have on hand. Had to use onion flakes (I'm NEVER out of onions!!), omitted green pepper and used catfish nuggets because that's what I had. Came out very good. Would have preferred to serve over rice but served over spiral noodles. Thanks for sharing!

Hawaiian Banana Nut Bread

Yum!! So good and EVERYONE raved about them. I made them into muffins, baked at 350 for 25 minutes. I took the advice of another reviewer about the pineapples. I bought tidbits which were a bit too big so cut them into thirds which was perfect. I was a bit short on the bananas (takes more than 3!) and a bit short on the cherries so I just added a bit more pineapple to make sure it was moist enough and it came out PERFECT! Thanks for the wonderful recipe!!

Traditional Mashed Potatoes

I use this recipe often when cooking for my nieces and nephews who like a simpler taste. The only thing I like to do different is added minced garlic to the water as I'm boiling the potatoes. LOVE this never-fail recipe.

Chicken Bog

My chicken bog recipe is a bit more complex so I wanted to try this one that had so many great reviews yet seemed so simple! Perhaps my changed ruined it but it didn't come out well for me. Couple changes. I had 3 lbs of chicken thighs instead of a whole chicken. Not sure if this leads to more meat but 1 cup of rice didn't seem like enough so I added 3/4 cup more rice and the proper ratio of additional chicken broth. Didn't have sausage. The rice came out too wet.. I even cooked for 1/2 hour (steadily stirring) to try to dry it out, but still too moist for me. I did however realize that working with chicken thighs is sooo much easier so at least something good came out of my experience! Thanks anyways.
