White Sauce

Simple and versatile, a great starter sauce for any pasta. Alfredo isn't an option sinice Hubby doesn't like parmesan, so this is a nice alternative to the standard tomato sauce that the kids love. A little salt & pepper, and some extra milk to thin it and it was perfect on bocconcini pasta (mini rigatoni). Will use again and again!

Salisbury Steak with Mushrooms

I made this tonight, and not only enjoyed the making of it, but thoroughly enjoyed the eating of it! The only change I made was to use about 1 and 1/2 tsp of Montreal steak spice in place of the salt & pepper. The gravy was excellent (and I'm not known for making good gravy, although I'm learning) and we enjoyed it over leftover mashed potatoes that I warmed in the oven. Will definitely make this again. Might put more mushrooms in next time, since we all love them. Thanks for a great recipe!

Cream of Broccoli Soup I

Made this for dinner tonight, and my husband and I both loved it. I used 2 cups 2% milk and 1/2 cup half and half cream, since that's what I had on hand, and it thickened nicely. I did omit the nutmeg as hubby isn't a fan, but the flavour was perfect once I added just a little salt. The broccoli flavour and crunch was just right, with half pureed and half chopped. Will definitely be making this again, as I know my parents will enjoy it as well!

One-Dish Rockfish

Yes, we loved it and will be making it again and again and again! I didn't have cherry tomatoes or lemon, but used lemon juice instead and since hubby doesn't care for 'hot' tomatoes, I left those out as well. The spinach was absolutely delectable and the fish (we used Basa Fillets) was tender and very flavourful. Definitely a keeper recipe. Thank you!

Pork Marsala

Fabulous! The meat was tender and juicy and the gravy/mushroom combo was a hit. I used white wine combined with Brandy in place of the marsala. Great recipe... thanks!

Bacon Wrapped Pork Medallions

We all enjoyed this, but next time, I will not bother pre-cooking the bacon as it was too difficult to work with. I didn't have oregano & basil on hand, but Italian seasoning did the trick. 4 minutes per side was too long for the browning - next time I'll do 2 minutes per side and see what happens! Love the idea though - thanks for sharing!
