Easter Meat Pie

This is a great recipe! I throw all the meats into my food processor instead of chopping! Recipe is good as is, but I add black pepper and 2 chopped hard boiled eggs to the filling. Delish!

Best Brownies

Followed brownie recipe exactly and they were delicious! Baked for 25 minutes they were perfect. The frosting needed a little milk to help it come together. Was too much for that size pan. Very rich and very sweet! My only change would be to use about half the frosting or I might just leave it off altogether!

Strufoli II

First time making Strufoli and they came out perfect! I used the zest and juice of 1 orange instead of the lemon zest. I put all dry ingredients in my kitchen aid with the paddle and slowly added wet ingredients until dough just starts to come together. Then I dumped it onto a floured board and kneaded until all flour was worked in. I used my deep fryer and fried at 338 degrees. Fantastic recipe!

Creamiest Rice Pudding

Absolutely the best rice pudding I've ever made! I took all ingredients out of fridge when starting recipe to get them at room temp. I brought the mixture up to bubbling over med heat, stirring often. Then covered and simmered on low for about 40 more mins. Stirring often so it wouldn't boil over. I used 2% milk, so I added a couple of tbsp butter at this point. I let it cool for 10 mins. Then I slowly added a couple of scoops of hot rice mix into bowl with egg mixture. Then slowly stirred it into pot. Brought it back to heat and let it bubble for about 5 mins to make sure egg was cooked. It was thick and creamy and delish!

Sloppy Joes II

Good recipe! It seemed a bit dry, so I added a lil more ketchup and about 1/2 cup water. I only simmered it for 20 mins. Used spicy brown mustard. Very tasty!

Hot Artichoke and Spinach Dip II

easy and delicious! i used 1/2 c mayo, 1/2 c romano cheese, dash of garlic powder in place of garlic salt. i also used 8 oz of mozzarella and mixed some into the dip and sprinkled the rest over the top. i used a small square glass pan and it took about 40 mins for the cheese to brown on top. served with crackers. very tasty!

Iced Pumpkin Cookies

Followed the recipe exactly. i baked for about 15-16 minutes on parchment lined cookie sheets. cookies were very soft, more like cake than cookies. it was a little too much clove flavor for my taste. next time would cut back on the cloves to 1/4 tsp, otherwise a very good recipe! icing was also delicious, but i needed to add more milk to get it thin enough to drizzle over cookies.

Downeast Maine Pumpkin Bread

Delicious, moist pumpkin bread! Used a little less than 1 tbsp pumpkin pie spice in place of the spices. used 2 8 cup loaf pans and baked for 1hr 10mins. Perfect recipe!
