Mary's Roasted Red Pepper Dip

Very easy and quite good - mine was a little salty, but that may have been the peppers or the cheese. I did use the hot pepper cheese, which was a nice touch. Makes a nice spread for tortillas too. Thanks for the recipe!

Pumpkin Pecan Cheesecake

Surprisingly good! I used homemade pumpkin butter and followed the recipe exactly. Very easy, wonderful for the holidays, and quite delicious. Thanks for the recipe!

Lentil Soup

Delicious and simple - great winter comfort food for us vegetarians. I cut the recipe in half and cooked it in my crock pot. I think for a change, next time, I'll add some curry powder for an Indian flair. YUM!

Chutney Baked Brie

obviously this is something that you can change alot, and still have it turn out. I used a peach chutney that I had made the previous summer, and walnuts (because I had them). Served with whole wheat crackers it was delicious! The only problem was....the rind of our brie tasted "funny" - as I've never had brie before I don't know if this was normal, or just the kind of brie we had. But certainly not the fault of the recipe. :)

Fast and Easy Tofu Lo-Mein

This is a great starting-point recipe, thanks for sharing! :) I used only 1 packet of ramen but that's 'cause I like lots of tofu and less noodles. :) Tasted good! I added about 2 tsp. garlic and thought that really added to the flavor, and used sesame oil to fry the tofu - YUM! I will be playing around with this and adding coconut milk, curry paste and some peanut butter to see how it turns out. Thanks for sharing!

Lacy Oatmeal Cookies

I really, really liked this cookie - much to my surprise. I left the 1/4 cup flour (as stated in the recip) and it worked great! They do spread out really thin. Took mine 12 minutes to bake, then you absolutely have to let them cool or they won't peel off the foil at all - just stick and crumble. I haven't figured out yet the perfect time to roll them up and dip in chocolate, but that's okay because I think I like them best plain - a sort of delicious, crunchy-chewy cookie with an almost toffeelike flavor. As a matter of fact, I think I may try adding just a few toffeebar crumbles next time I make these. YUM!

Hot Bean Dip

This recipe was a great start (actually my hubby loved it as-is) but I would make more modifications next time. I did add 1 entire packet taco seasoning, and may add more next time. I am also going to try at least half pepper jack cheese. I used refried black beans and they were yummy - try that if you can find some!

Absolutely Perfect Palak Paneer

I'll admit, I don't know exactly what Palak Paneer is supposed to taste like. But this was good! I didn't have enough sour cream, or any paneer, so I used a block of soft tofu and blenderized it and it tasted great. I added extra spices and agree with other reviewers that this is great with basmati rice (and a beer). MMMM!

I adore this and make it for family gatherings. I make it vegetarian by leaving the meat out - for me - and use spiced italian sausage for everyone else. This is one of my favorites!

Awesome Broccoli-Cheese Casserole

Yum! I used mostly cauliflower with some broccoli and red peppers, because that is what I had in the fridge. It made the casserole very pretty, but next time I will leave out the red peppers as the flavors just aren't that complimentary. I added extra cheese per other reviewers as well as shredded asiago cheese. Very good, i will be making this again!

Autumn Apple Salad II

I really wanted to like this salad, but to me it was just "okay". I felt like it was just a little bland, it was missing something? I used nice tart apples...perhaps some sort of cheese cubes would have helped? Anyway this certainly wasn't bad and very nice and healthy.

Waikiki Cornbread

VERY yummy. I love really "corny" cornbread so I decreased the buttermilk bicsuit mix to 2 1/4 cups and increased the cornmeal to 1 cup. Delicious, and I think it's even better the 2nd day.
