Chicken Florentine Casserole

Very good, but like others tweaked it a bit-- used froz spinach as well (canned sounded too slimy), also used only 1 c mozzarella, seasoned chix breasts while baking and served over noodles. Next would try making it lighter by using milk, less butter etc and may season spinach mixture a bit. Very tasty though, will make again-- great for taking to a friend whose had a baby etc. thanks!!

Cookie Balls

Just loved these cookies-- and have passed on this much requested recipe to many-- very easy and taste delicious. I used a cookie scoop (similiar to ice cream scoop just smaller)- made the balls uniform and less messy. Also excellent made with mint oreos, choc oreos etc-- great dipped in milk choc bark as well though like the vanilla the best. The only thing i don't care for about this recipe is the name-- one friend suggested Dirt Cake Cookies, another suggested (for holiday time) reindeer droppings..hmmm...i'll keep thinking. give these a try, you won't be disappointed!!

Easy Chicken Enchiladas

Very good-- will make again-- did make some changes however: no real need to measure-- just mix-- I used the tub cr cheese (all i had), black beans in place of pinto, added cooked spinach and used a mixture of colby jack cheese and pepper jack. i also took the advice of others-- 1/2 can enchilada sauce on bottom of pan, 1/2 on top; mixed in a can of green chiles. It had a nice kick and was very filling and easy. Thanks!! may add mexicorn next time!

Two Ton Bourbon Pecan Cake

I'm a huge bourbon fan and even I had trouble with this one-- the cake was great, but the bourbon poured on after was overpowering--was like eating a shot of bourbon--very strong-- tasted better after sitting for a day-- may try again but pour less bourbon over top (maybe bake more within), decrease the pecans and maybe "candy" a portion of the pecans in the cake as the cake is not very sweet. Would also be good with a powdered sugar glaze spiked with bourbon. Good cake, just too strong.

I got this same recipe from a great friend-- only her recipe calls for 2 1/2 c bourbon and 7 c water--all else the same. We serve it with 7 up or Sprite as well--- the recipe makes a good sized batch (freezes well in plastic storage containers) but also goes down so easy and quick!! It's a favorite!!!

Chocolate Chip Pudding Cookies

Very good cookie-- crisp on outside- soft on inside. I used vanilla pudding and baking m&m's-- Tasty!! Followed other directions and cookies turned out perfect!! Thanks for a quick easy recipe!

Ramen Cabbage Salad

I make something very similiar-- great with leftover chix (shr/chopped) or rotisserie chix-- also use toasted almonds and sesame seeds, but sunflower sounds good too-- mix of red and green cabbage adds visual appeal-- try rice wine vinegar in place of white vinegar. I've never tried it with the seasoning pkt- use a little sugar and white pepper in the dressing instead. Great way to eat cabbage!!!

Anniversary Chicken I

good recipe-- very different-- a little too salty but serving over rice helps remedy this-- I recommend using real bacon and cooking chix (i cut the breasts into strips) in the bacon grease- served at a dinner club and had good reviews, though not sure I can get past the combo of ingredients!!

Mushroom and Leek Soup

Very good and very easy!! Made several changes-- used chix broth, added spinach (only had froz chopped, fresh would have looked more upscale), doubled mushrooms as previously suggested-- didn't need exact measurements-- "full bodied" soup-- reminded me of a french onion--was excellent served with fresh grated parmesan cheese-- would be good with a little leftover chix (shredded) and crusty bread for a complete meal.

Chocolate Peanut Butter Squares

Made this recipe 2x--once for my workplace, once for husbands-- rave reviews by all- dieters begged me to take them away as they are addictive, but very rich. Few adjustments as previously suggested-- double choc chips and used 2 Tblsp shortening (ran out of butter) instead of 1/2c-- also 1st batch was a little dry when I upped the grah crax (crumbled when cut)- 2nd batch was perfect-- will make again-- makes alot & is a crowd pleaser!! Thanks

Easy Sugar Cookies

Great recipe!! Reviewed many of the sugar cookie recipes on this site--looking for an easy no-roll version and choose this one as most seemed to have success with it! I upped the vanilla to 1 1/2 tsp and changed sugar to 1c white 1/2c confectioners as some had suggested. Made these with my 4 yr old so had to roll in colored sugar or sprinkes or cinnamon & sugar-- looked great-- tasted terrific-- would keep baking time to 8 min to keep soft. Excellent-- quick to make as cookies don't spread too much so you can fit many on a single pan-- will make again soon!
