Golden Rum Cake
Bundt is the best, but I have also made this in a 9X13 and as cupcakes. The cupcakes were messy, and I probably won't do that again. This is sooooo good the next day and the day after that. A true crowd pleaser every time. I use Matasalem Rum which is so smooth and what makes my cake better than yours! No offense.

Ham Tetrazzini
This was heavy and odd. I think it is more suited for turkey of chicken than ham. It cooked quick, but I had to add a lot to bring up the flavor, like garlic, green onion, sauted mushrooms, no pimentos. The ham just felt out of place. Waste of good ham.

Chicken Enchiladas II
This recipe is great jumping off point for whatever you like. I used corn tortillas. I also used the Roasted Garlic Cream of Mushroom soup...yum! and I added fresh diced mushrooms, cumin and a splash of hot sauce-Cholula of course. I wanted to lick the bowl after filling up my tortillas. Loved by all and super quick to get it in the oven.
