About this Cook
Mother of 3, database programmer but currently not working, cooking seems to be one of my favorite things to do. Luckily my husband is a really good sport about doing dishes . ..
My favorite things to cook
The biggest challenge is finding foods that we all like, because we are all picky eaters. Plus I am currently avoiding wheat and milk . . . so that makes things challenging.
My favorite family cooking traditions
My mother had a degree in nutrition and a degree in food chemistry, had worked in restaraunts, and wrote several cookbooks when I was young. We grew up with a wide variety of gourmet foods - but i'd never even heard of grits or biscuits and gravy until I was in my 20s.
My cooking triumphs
Some of the cheesecakes I've made for my daughters b-days, wow!
My cooking tragedies
Best ever . . . I was making tomato soup and I was very tired and distracted. I mixed together the milk and cornstarch, wondering why it didnt seem as stiff as usual . .. but i poured it in to the soup anyways . . . and we had volcano tomato soup!!

Pressure Cooker Hard-Boiled Eggs
I started boiling eggs in my pressure cooker recently and I love it! For my instant pot, I use the steam setting. Much easier to peel! (although my friend's farm-fresh eggs were still a challenge)

Peanut Butter Pie VIII
Made this with slight variations for "Pi" day and it was a HUGE hit with my family! I dont think I'd ever had a peanut butter pie of any sort before, and I was blown away! I reduced powdered sugar to 3/4 c as mentioned by some reviewers and it was still plenty sweet for us. I cooked the pudding in the microwave. I used almond and coconut milk and a gluten/dairy free home made crust. Thanks for such a treat!

Donut Muffins
Awesome! Was still great when I subbed my fave gluten-free flour mix and subbed light coconut milk for the milk. i also reduced nutmeg to 1/2 tsp as i'm not a huge fan, but i couldnt even taste it. I thought the butter (sub) was rather heavy, and will probably try some alternate toppings next time - but so good my 15 yo got in trouble for eating 15 of them by himself .. . leaving 9 for the other 4 of us . . .. oops.
