Spicy Chicken and Sweet Potato Stew

Really delicious and pretty quick to make. I used a whole chicken cut up, cooked it separately with just a little salt + pepper for about 6 min/side. Cut that up and tossed it in the remainder of the stew at the end. Worked beautifully. Hand-made tortillas were a nice pairing. Great flavors, highly recommend!

Grilled Spicy Lamb Burgers

Absolutely delicious. A very nice change up from the regular burger. The combination of herbs and spices are just the right mix--there's a hint of everything, but nothing is overpowering. Served these with sauteed red onion, spinach and tomato and feta with lightly toasted bun. My wife raved about these burgers and I did too. Will definitely make these again! Sweet 'tater fries were a nice side.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

Agree w/ the other reviewers, recipe is good, but a bit bland. We added 3 cloves of garlic at the start with the shallots and green onion, as well as a few sprinkles of cumin. Could have still used a little more kick. We also made a yogurt sauce with feta and lemon. The pungency of the feta and creaminess of the yogurt worked well w/ the rest of the dish. I think using canned whole tomatoes with juice would be better than using a fresh tomato. Overall, turned out well, but it did lack that zing.

Roasted Vegetables

Delicious! Like the other reviewers said, this works with just about any vegetable you have lying around. I used red potatoes instead of yukon gold;added a two carrots, 2 celery stalks and 1 leek. Turned out very well--the extras helped even out the starchiness. Used dried herbs and those worked fine; all though I can see how fresh herbs would make it even better. Goes great with quinoa. Very simple to make; very delicious!

Coriander & Cumin Crusted Grilled Swordfish with Avocado Relish

very quick, easy and delicious. uses ingredients that are already around the house, so no special shopping. i added a bit of chipotle pepper (in adobo sauce) in place of pepper flakes. makes the relish stand out a bit more. also, squeeze some lemon juice onto the swordfish to bring out the tastes!
