Red Velvet Cupcakes
I made this for a thing at my daughter's school and it came out pretty great! I would add a little more red color next time and I thought they were a little bit too dense, but my husband loved them and thought they were perfect. I would definitely make again, but I think I will sift the flour and see if that lightens them up a bit.

Simple White Cake
I made this last night for my daughter's class party today. I followed the advice of other reviewers and added more milk, (upped to about 3/4C) and it was still a thick batter. Very easy to spoon into cupcake liners! I did not sift anything, but I didn't pack the flour into the measuring cup either (you're supposed to always spoon flour into the measuring cups, not scoop and pat, which may be why some people are getting the dense texture). The cupcakes came out fluffy and moist. And it really does taste like a sugar cookie! Overall, I'd have to say it was an easy, low-stress recipe and the finished product got no complaints!

Creamy Chocolate Frosting
I made this for a quick batch of yellow cupcakes and it was super quick and easy. I thought the frosting tasted prominently of cocoa and wasn't overly sweet. Hubby thought it was very sweet, but liked it fine on the cupcakes. A single batch of frosting would probably frost 3 dozen cupcakes. I only did a dozen and the rest is in the fridge still in the piping bag. I saw someone used it on brownies and I'm thinking of doing that in a few days. This will be my go-to chocolate frosting, for taste, quick and easy to put together and super easy to work with.
