Greek Salad I

Just made it tonight and loved it! The lemon juice made it taste so fresh but not overly-tart. Great balance with all the other ingredients. I used Calamata olives (pitted). Went together very quickly too!

Chicken Tortilla Soup II

Perfect flavor and spice! We used left over chicken from burritos (w/green enchilada sauce already in it) and sprinkled cheese on top (w/ a dollop of sour cream). Can't wait to make this for company!

Best Toffee Ever - Super Easy

This couldn't be any easier or more delicious!! One recipe makes quite a bit. We toasted our whole almonds at 350 for 10 minutes before chopping them.

Cream Cheese Frosting II

Wow! This is so nice and creamy and has just enough tang. I mixed it for about 3 minutes to get it nice and smooth and it was just perfect. I used this to top a Baby Food Cake Bars recipe and it was just the right amount.

Company Cheesecake

Finally!! A perfect cheesecake!! I made this for Christmas and it turned out beautifully! It was pretty to look at and oh so delicious! This recipe is very uncomplicated. I let mine cook an extra 10 minutes (I think my oven runs cool). I topped it with raspberry spread and then made sweetened whipped cream with 2 dollops of sour cream to give it some tang and put that over the raspberry spread. I wish I had taken a picture it was so pretty! I will use this recipe again and again!

Chewy Pecan Bars

These are so tasty I can't stop eating them! I made mine with 1 cup brown sugar and 1 cup white (just a personal preference, I didn't want them too mapley). I lined my pan with tin foil so I could pop the whole thing out and I cut them real small (about 1x1) for Christmas trays. I really like the chewy texture.

Burger or Hot Dog Buns

I really love this recipe!! It's so simple! I used my food processor to mix and knead it and they have been light and fluffy each time. I'm going to try 1/2 whole wheat next time. This is the recipe I've been looking for!!!

Best Spinach Dip Ever

Wow! This was so easy and delicious! I doubled the water chestnuts for more crunch. The hard part was finding the leek soup mix. I finally found it at Safeway (Knorr's). I sprinkled a little salt over the spinach to draw out the liquid and then squeezed it (after waiting about 1/2 hour) and that worked really well.
