Loaded Mashed Potato Cakes
Had leftover simply mashed potatoes, about 2 cups. Used 1/2 c flour, but next time will decrease to 1/4 cup. Used a handful of mozzarella cheese that I wanted to use up. Seasoned with salt and pepper and egg. Browned in a little butter 5 min on each side. Served with a dollop of sour cream and a little chopped fresh onions. Served with eggs and turkey sausage for breakfast. Much simpler version.

Butternut Squash Soup
Great flavor, made this for a friend who is undergoing radiation. Roasted the squash, used two butternut's, could have used three of them. Added carrots, used fat free Swanson's chicken broth, 6 oz of light cream cheese, and non fat yogurt starting with 1/2 cup but adding more in the blender to decrease the thickness. Took awhile to make but will make again.

Simply Divine Meat Loaf with Spinach
I threw is half a bag of fresh spinach. Soaked some great bread we had with 2 beaten eggs instead of cracker crumbs. Only used 1/2 package of dried onion soup mix. My husband said this was the best meatloaf ever!
