Traditional Mexican Guacamole

It is great, I did use lime instead of the lemon as that is my favorite. It is so pretty with the tomato and I used green onions for darker shades of green. Big hit!

Creamy Crab and Artichoke Dip

Pig Stomach

My mother in law made pig stomach for us and I have not had it since she passed 11 years ago. So I need to know basics such as oven temperature an bake time. I sautéed onion, celery, diced potatoes and corn for ten minutes, stuffed the stomach, used the steel pins from my MIL and baked for 1.5 hours. It was fantastic! Almost as good as "moms!"

I sautéed onion, celery, diced potatoes and corn for ten minutes, stuffed the stomach, used the steel pins from my MIL and baked for 1.5 hours. It was fantastic! Almost as good as "moms!"

Cuban-Style Panini

I used this recipient tonight but altered it into a Cuban Mix Salad! I used crescent biscuits in the press, put two of them on the plate,put shredded romaine on top, added a few sliced green onions, mixed some Caesar dressing and relish, with Dijon mustard and put over the lettuce. Atop that I put some shaved ham, shredded Swiss cheese, and roasted pork. It was so good and tasted like an upscale version of a Cuban Mix.

Stuffed Cabbage Rolls

This was my first try at making stuffed cabbage rolls, and it was a home run! I did use half hamburger and half pork sausage, and added some chopped red and green peppers. The most difficult part was trying to get the cabbage leaves off the head in one piece, they kept breaking so I put the whole head I the boiling water and then they began to come off easily.
