I tried this recipe with my family tonight, and we would have to give it four stars. I did not have any foil but I did use a coverd roasting pan. I layered the roasting pan with chopped apples and butternut squash. I then followed the recipe completely. I put the pork on top of the veggies and roasted for one hour. It was great. I did cook the apples a little to long; next time I will wait for a half hour then add them. All in all it is a great recipe for a pork roast and the squash and apples that I added really complimented the dish.
