Ginger Bars

I went out of town for a day, came back, and the entire pan was gone! Beautifully moist and delicious, definitely not cakey, with a nicely balanced ginger flavor. I baked mine for around 38 mins., which made the edges slightly crispier than I would have liked, but the interior was perfect and cut into squares with no problem. These will be a fall tradition from now on.

Creamy Chicken and Wild Rice Soup

Everyone absolutely loved this soup, including a picky 6-year-old who proclaimed, "I don't like soup!" yet proceeded to eat the entire bowl. Really easy and tastes fantastic. Definitely a keeper.

Microwave Potato Chips

I've used this recipe a dozen times now and my son loves these healthier potato chips as much as the ones that come in a bag from the store. I use Russets most of the time and they still turn out browned and crispy and delicious, although I think the Yukon Golds have a little more flavor. Great recipe!

Strawberry Oatmeal Bars

Super-simple to make and they taste fantastic. I can see making these with all different kinds of preserves. Used a 7x11 pan and they turned out perfectly. Great recipe!

Autumn Muffins

I was very pleasantly surprised by the taste of these muffins. I subbed dates for figs and added raisins instead of nuts. I also halved the recipe which gave me 13 muffins baked in silicone muffin cups, and sprinkled raw sugar on top before baking to give them a nice crunch. The flavors in the muffin are very well balanced with the perfect amount of spices. Definitely a keeper recipe and the perfect autumn treat!
