Cocktail Meatballs

Reviewed: Jan. 19, 2014
easy to make, and delicious! nice to have a slight tartness from the cranberry sauce, instead of the typical grape jelly....doubled the recipe last time and they were gobbled up! will be making them again, for super bowl Sunday, so might triple the batch! UPDATE...made a huge batch for our super bowl party today, and they were gone like lightening..the men were even spearing them out of the skillet, 10 minutes before they were done simmering, and my grandson gobbled them up..so good, and even better when you make the sauce the day before, and bake the meatballs the day before as well..the flavors are so much better, believe me! all I had to do when we got to my daughter's house, was to simmer them in the sauce till done...next time I will quadruple the amount, they go that fast!

Baked Ziti I

Reviewed: May 6, 2015
Would give this 10 stars if I could! Made this yesterday, as my daughter and 2 grandkids were stopping by..In addition to the pound of hamburger, I added a half pound of ground hot Italian sausage, as husband likes it meaty..also added 2 minced garlic cloves while cooking the meat and onion..I let the sauce and meat (used 2 jars of barillo tomato basil sauce) simmer very slow, covered, for about an hour. Cooked the ziti, then added it to a big pot with the meat sauce, and mixed it all together. Put in half the ziti mixture in a 10x14 glass dish, then the provolone slices and sour cream, piped out of a Ziploc baggie, then the other half of the pasta mix, then the mozzarella slices and parm cheese, covered it with foil and baked.. Let me tell you, this was delicious! Never again will I use ricotta. The flavor is out of this world! It makes a huge amount, and we ate all but a small lunch sized serving. Everyone (5 people) left the table stuffed to the gills! This is a keeper, and is good enough to serve company. Try this, and do NOT be tempted to use ricotta as some have suggested..the provolone and sour cream are what give it it's unique flavor, and make it stand out in a sea of ziti recipes. Thanks Colleen!

Chef John's Make-Ahead Turkey Gravy

Reviewed: Dec. 29, 2013
followed other poster's advice, and used 4 wings..also added a package of trader Joe's savory turkey broth concentrate, after deciding there was not enough turkey flavor when it was done...other than that, followed the rest of the directions....everyone loved it, and said it complimented everything on the Thanksgiving dinner menu...I strongly advise using 4 wings, then tasting for depth of flavor...as is, 4 stars..after adjustments, 5

Mom's Buttermilk Pancakes

Reviewed: Nov. 3, 2013
delish! a simple basic recipe that turns out so good and 'buttermilky' tasting! my husband said these were better than crackerbarrel, and believe me, that is something! Next time I will use unsalted butter in the recipe, and that, will be perfection!

Oven Roasted Teriyaki Chicken

Reviewed: May 1, 2015
made this recipe with whole chicken thighs, as that's what I had on hand....made the sauce ahead of time, and used finely grated fresh ginger instead of powdered, 2 cloves of garlic instead of one, and used brown sugar instead of the fake stuff..also added a good pinch of red pepper flakes for a bit of heat, and used a lower sodium soy sauce..simmered on the stove until thickened, then let it sit for 30 minutes..baked chicken as written, basting every 10 minutes..this turned out delicious, and the skin was dark and crispy...will definitely add this to the keep file, and will make this for company, it's that good!

Mary's Meatloaf

Reviewed: Feb. 24, 2014
made this exactly as written, but from now on will use dry bread crumbs or panko...the fresh bread cubes made the meatloaf fall apart in places when sliced..over all an easy meatloaf to make, with lots of flavor! will make again with the adjustment

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: Apr. 13, 2015
This was delicious! only thing different was I used hot Italian sausages, as that's all we had. Didn't use fresh parsley as I forgot to buy it, but will make sure to next time. This was a very easy to make, flavorful dish, that tastes like it took a lot of time and effort! Served it with freshly grated parm reggiano cheese..Fabulous!

Lemon Horseradish New Potatoes

Reviewed: Mar. 4, 2014
easy to make, and looked great on the platter, but the lemon was too tangy for us...used small Yukon gold potatoes, and cut them in half...probably won't make it again..

Meat-Lover's Slow Cooker Spaghetti Sauce

Reviewed: Oct. 8, 2013
made this recipe as written, only I used 3/4 pound of Italian sausage as I had to use it up...got a late start making this, so cooked in the crock for 6 hours, then simmered the next day for an hour and 20 minutes on the stove..this was delicious! made the house smell amazing too! sauce was thick and meaty, and even my Grand daughter loved it! froze a quart for another meal..

Chef John's Macaroni and Cheese

Reviewed: Mar. 7, 2013
made this for a family dinner...followed the instructions to a T, but following advice of other posters, I made 1 1/2 the amount of cheese sauce..after all of that, it still turned out on the dry side, plus the flavor was way to bland for all of us, even the grand kids didn't care for it..a lot of work and ingredients for a mediocre dish..won't make this again..
