Spinach and Feta Pita Bake

Great light summer meal or snack. Next time, I might sprinkle a bit of cheese under the spinach because it kept sliding off of the pita. Overall, very good.

Chocolate Chip Banana Muffins

I thought they were pretty good - a little chewy, but good. My 3 kids, on the other hand, thought they were fantastic! I followed the recipe, using mini choc chips and vanilla honey greek yogurt. Definitely a hit with the little ones!

Napoleon's Banana Muffin

Yummy! They are lighter than banana bread, and the liquor gives them a different taste. From now on my ripe bananas will have to be split between Janet's Rich Banana Bread and this recipe. Just delish!

To Die For Blueberry Muffins

I followed the recipe exactly, except for using fresh blackberries instead of blueberries. The muffins were moist and yummy but not too sweet. A perfect breakfast muffin. I made 12 reg size muffins, and the bottoms were overdone after 15 min at 400. The muffin was still great, but will try making larger muffins next time.

Hummingbird Cake III

I've made this twice - once substituting 1c applesauce for 1c of oil, and once making it as stated in the recipe. Both times the cake had a wonderful flavor. I think it was much better before it was frosted. As others have said, the frosting is very sweet, and it overpowers the light fruity cake. I will have to experiment with frostings, but the cake is really lovely. Oh, and I will only make it with the applesauce next time b/c it doesn't seem to change the texture or flavor noticeably.

Chuck's Favorite Mac and Cheese

Yummy, but dry. I reduced the breadcrumbs and added milk, but it still seemed too dry. The kids didn't eat it (guess nothing compares with the blue box:) but I loved it. The texture would be improved with a bit more milk, but the taste is great.

Asparagus with Parmesan Crust

Blue Cheese Burgers

Awesome Slow Cooker Pot Roast

I added carrots, onions and potatoes with the roast and it was lovely. Tons of gravy - kind of like a stew. My family said that they liked it alot better than my 'other recipe'. So, this one wins!

Brown Sugar Meatloaf

I used onion soup mix instead of onions, and then skipped the extra salt. I put the brown sugar/ketsup mixture on top and bottom. It was a hit! Not too sweet at all but very moist.

Aussie Chicken

My family loved this one. I used mozzarella cheese only and doubled the mushrooms. Also, I was out of honey, so I just used a bit more corn syrup and less mustard, and it turned out great still (just not so sweet I imagine).
