Crisp Little Lemon Cookies

These were great! Fast and yummy, and no one would ever guess that they only take 5 minutes to whip up! Amazing! I did use two cups of Crispy Rice, as others suggested....

Banana Crepes

Cinnamon Coffee Cake II

Fabulous! I made this for a brunch on Mother's Day, and it was great. I made it in a Bundt pan, layered it four times, used cheesecake pudding instead of butterscotch, pecans instead of walnuts, 1/2 cup of oil, 1/4 cup of white sugar and 1/4 cup of brown sugar, baked it ten minutes longer, and dusted it with powdered sugar.

Best Cherry Pie

My mother requested "old fashioned cherry pie" for her birthday and this pie was terrific! I followed the advice of others and used corn starch instead of flour, ditched the food coloring, used 2 14 oz. cans of cherries, added cinnamon and nutmeg, and since I could only find tart, not sour cherries, I decreased the sugar to 3/4 cup. I used Pillsbury pie crusts and cut the top crust with a pizza cutter, then latticed it, brushed with egg white, and baked at 425 for 15 minutes, then 325 for the rest of the time. It was gone before the day was out.

Chocolate Covered Orange Balls

Absolutely wonderful! The orange taste is intense, and yet natural- not like orange flavoring at all. These got rave reviews, and were really simple to make. For all of those who had chocolate-dipping issues: drop the ball into the chocolate, lift it out with a fork (but don't stab it!) and gently shake off excess. Then use a teaspoon to roll the ball off of the fork and on to your tray to harden. I only needed about 2/3 of the chocolate- but I drizzled the rest on a batch of biscotti...

Super! I made this for brunch on Mother's Day, and it was a huge hit! (and really easy!) I served it warm with homemade Peach Preserves, sour cream and fresh berries. It was gone before the first batch of mimosas.

Stacked Fajita Vegetable Enchilada Casserole

Absolutely fantastic! I made this for dinner the other night, and my husband (a meat eater) could not stop raving! The only changes I made were to use green chiles instead of jalapeno, a (cooked) bag of dried beans rather than canned, and olive oil in place of the margarine. Definitely a keeper!

Fabulous Fruit Salad

Terrific! I follwed the advice of previous reviews and eliminated the celery, added grapes, and used key lime yogurt. It was even better the next time I made it- lost the grapes, and added blueberries! Perfect!

Roast Sticky Chicken-Rotisserie Style

Spectacular! I have made this chicken several times over the last couple of years, and it always turns out perfect. As other reviewers suggested, I always apply the spice mix inside and out, add in garlic, celery and rosemary with the onion inside the chickens, put the chickens in gallon zipper bags, and refrigerate overnight. Today I will serve one chicken for dinner, and shred the second one to make King Ranch Chicken Casserole, also from this site. (Which is a super easy crowd pleaser!)

Make Ahead Breakfast Casserole

Terrific! Super easy, and the make ahead aspect makes it a keeper! I used pepper jack cheese, sauteed fresh mushrooms, garlic/cheese croutons, ditched the mustard, and dusted the top with onion powder. (I had the baby pouched while cooking, so cutting onions was NOT an option!) After plating, I topped each piece with shredded Parmesan. Awesome!

Flounder Mediterranean

Fabulous! I had all the ingredients in the fridge, (except roma tomatoes- I used canned diced) and my husband raved! A loaf of fresh rustic italian bread is a must to go with this dish. Try it- you won't be sorry!

Banana Banana Bread

This is a very quick and easy recipe, which is why I tried it, instead of my usual recipe from a Better Homes and Gardens cookbook. However, the resulting bread is very dense and moist- a texture like fruitcake, and the flavor is bland. (It needed some grated orange rind, vanilla and walnuts) It still got eaten, but I wouldn't make it again.

Flourless Chocolate Cake I

As the mom of a little boy with celiac disease, I am always looking for cake recipes without gluten. This cake is great! Just perfect with a bit of unsweetened whipped cream, and everyone loved it... except my son. It's probably too sophisticated for a four year old palate!

Fish Fillets Italiano

Fabulous, and quick!!! I used a stew pot instead of a frying pan, chopped the cod into domino sized pieces, doubled the parsley and olives, and used a can of Rotel, instead of plain tomatoes. When the fish was cooked, I threw in two cups of leftover rice from the fridge, let it simmer, then served it in soup bowls garnished with parsley sprigs.

Nutty Crispy Sugar Cookies

Fantastic! I rolled some into balls, flattened with a glass, and sprinkled with cinnamon sugar- tasted just like snickerdoodles. The rest I frosted with powdered sugar icing for my son's preschool class. The kids loved them, and the teachers asked for the recipe!

Quick Peanut Butter Cookies

Perfectly peanutty! I found the negative reviews of this recipe to be hilarious! "Too sweet" "Tastes too much like peanut butter" - as if one were expecting a recipe for peanut butter cookies to magically produce table water crackers! These are fabulous. I use a small cookie scoop, and then flatten the balls with a sugared glass. I bake them on a silpat and let them cool at least 15 minutes before very carefully removing them to a cooling rack. They turn out crisp and perfect every time.
