Eggplant Parmesan II

Very flavorful. Only needed two eggplant; used plain breadcrumbs seasoned with Italian Seasoning. I read a few reviews before making it and brush the eggplant with olive oil as suggested. This made a great leftover as well. Making it again very soon!

Old Bay® Grilled Lime Tuna Steak

Very good. Used on swordfish steaks. Didn't have any limes or cilantro so substituted 1/4 cup lemon juice and mixed in some thyme and crushed mint. Great flavor, marinade enhanced the swordfish flavor very well.

Shrimp Enchiladas

This turned out very watery for me. The flour tortillas were soggy/doughy. If I were to try this again I would use corn tortillas and increase the baking time or use cooked shrimp. Shrimp near the middle did not cook all the way.
