Tuna Noodle Casserole III

This was excellent - good comfort food for a cold night. I took a few pieces of advice from the reviews and it was perfect. I added 1/3 cup milk, 1/3 cup light sour cream, a sprinking of salt, and a sprinkling of dried onion flakes to the original recipe. I didn't have american cheese so I substituted some sharp cheddar - SO yummy! I also mixed everything together instead of layering which distributed the flavors well. Enjoy!

Apricot Glazed Pork Roast

This was super easy and turned out really well. I agree that the sauce could use a little more richness - maybe just some extra salt. Otherwise it's a nice flavor. I started with 2 frozen pork loins cut in half and used a whole can of regular chicken broth instead of condensed. Next time I'll try the condensed. I thickened the sauce like suggested and it made a nice gravy for topping over rice.

All-Day Apple Butter

I'm a huge fan of apple butter and love it on top of cottage cheese so this was the perfect project when I had 6 extra pounds of apples lying around. I ended up using yellow apples (can't remember exactly which kind) which were already relatively sweet so I only used 1C white sugar and 1C dark brown sugar which was plenty. I food processed the apples first which made for a very nice consistency by the end. I used exactly the spice ratio in the recipe but would probably go for a little more cinnamon and maybe some nutmeg next time around. Cooked covered on low for 12 hours and then uncovered for another 4 until there was barely any water left.

Island Kielbasa in a Slow Cooker

i've done this both in the slow cooker and in a frying pan and either way it's delicious. in the frying pan i just give the sauce a few minutes to melt together and cook down and then i add the sliced kielbasa. it's super easy and a tasty alternative to plain kielbasa. i use turkey kielbasa and serve it with salad and pierogies to complete the meal.

Scallops with White Wine Sauce II

This was excellent! Made double the sauce and used a heaping T of shallots and 4 cloves of garlic. Instead of scallops I put a pound of lobster meat in to the pan of sauce for about 5 minutes. I'm tucking this one away as a recipe for company!

Fluffy Pancakes

My birthday boy woke up requesting pancakes and since I was out of mix, I threw these together quickly before school. They turned out great and were very fast and easy.

Creamy Chicken Bake

This is great! One of the few easy recipes that's great as-is, though I had to modify slightly since I didn't have everything. I made it with cream of mushroom and didn't add mushrooms since I had none. The crumbs were really delicious and next time I might make slightly more.

Honey Mustard Sauce

i scaled this down to 3 servings and used regular mustard instead of dijon since i didn't have any. i also used lowfat mayo and didn't refrigerate for 2 hours. i would have added a little less mustard since i used regular, but added more mayo to make up for it. in the end it was delicious!

Simple Turkey Chili

this is a great base recipe. i added a can of corn and doubled the salt and cumin to add a little more flavor. served it with corn muffins. delicious!
