Brooke's Best Bombshell Brownies

Unfortunately I didn't stick to the recipe 'exactly' because I used 1/2 brown sugar and 1/2 white sugar as I do with most of my baking. I am fairly confident that these are just as tasty with all white sugar and will gladly rate 5 stars. Mine baked for about 29-30 min and they were perfect (soft and chewy with firm edges). Unless I am out of cocoa then I won't use a box brownie mix again.

Ham Salad II

This is a wonderful *base* recipe to use leftover ham in a hurry. However, as written, this recipe uses too much onion and is too salty. The longer you keep the dish in the fridge, the stronger the onion will become. The first time I made this, I couldn't get enough and was eating right from the processor. The next day, the onion had consumed the flavor the ham and I couldn't get past the first bite. This time I used about 2T of chopped white onion; enough to taste it the first day and enhanced the flavor of the ham the following day. I used 1 C Smart Balance light dressing in place of the mayonnaise. Since everyone seems to have their own mayonnaise preference, you may want to start by adding 1/2 C at a time. I followed another reviewers suggestion and used 1/2 sweet and 1/2 dill relish. The sweet relish provided a nice contrast to the ham and onion. There really isn't a need to mix the wet ingredients separately. I threw the diced ham, onion and celery in the food processor and pulsed until I was happy with the consistency. I transferred the ham mixture to a storage bowl then added the dressing and relish. This meal is designed to be enjoyed over a few days. Since the original recipe didn't taste good beyond day one, I had to give it 4 stars.

Award Winning Soft Chocolate Chip Cookies

This has been my go-to chocolate chip cookie recipe for a few years. I finally tried it with chocolate pudding mix and it was a-maz-ing! Not too sweet or chocolately. Not sure why but these are always tastier the day after.

Debdoozie's Blue Ribbon Chili

Great crowd pleaser (used the chili seasoning 1 recipe)! Only downside: recipe did not make suggested 6-8 servings. At best, it serves 4 adults and a child so I had to rated the recipe based off a taste test I did while cooking combined with the reviews of those who actually ate a bowl full:-)

Blackberry Pie I

We have blackberry bushes so I make this pie every year. The recipe 'ingredients' (what goes into the pie) are perfect; right amount of sweetness and consistency is spot on. The only reason I couldn't give it 5 stars was 1) I have to brush the bottom of the pie crust with egg white to keep it from getting soggy and 2) the amount of sugar used on top was too much for us. I usually just sprinkle and 'eyeball' it, I'd say no more than 1 1/2T. BUT this pie (with the slight mods) gets rave reviews and is a summer favorite for our family.

Zesty Slow Cooker Chicken Barbecue

This is a great tasting easy recipe. Don't let the BBQ/Italian dressing combo throw you off:-) Plus it is incredibly cheap to make if you can stock up on the dressing and BBQ sauce when they go on sale.

Creamy Chocolate Frosting

Best chocolate frosting ever! It is very rich which is why I only use this cupcakes or other small desserts. If you use this frosting for cakes (adjustable portions), too big of a serving leaves people thinking the chocolate flavor is "too" rich or sweet. This recipe is perfect for small desserts and tastes like a luxurious treat from an upscale bakery.

Burrito Pie

I've made this recipe about 3 times; the first two as written and the third with a couple of adjustments (hence 4 stars instead of 5). Now I use 2-3 tortillas per layer (depending on meat consistency) and diced tomatoes with cilantro (instead of tomatoes with the green chili peppers). It scaled the heat down a notch and added a small amount of extra flavor.

Rempel Family Meatloaf

Baked Spaghetti

This is a terrific recipe for anyone tired of making regular spaghetti. My husband and daughter (a 13 yo spaghetti addict) love it and it even tastes great reheated. Recipes that become a regular in our house get 5 stars.

Yummy Roll Ups

WARNING: These are really addicting. I've made this recipe several times for get-togethers and just to snack on. I had to rate 4 stars for the recipe 'as-is' because using spears proved to be a messy eat. I switched to mini dill pickles; same great taste, more bite size appropriate and less mess.
