Baked Honey Mustard Chicken

I tossed all together with a little oil minus the honey and the mustard and made a marinade. After allowing it to sit in the fridge for two hours I mixed up the honey mustard and and poured it over the chicken. Mine was completely cooked after 30 minutes. I served with roasted potato wedges. Very easy and tasty!

Oatmeal Coconut Thin Crisps

Yum! I substituted half the sugar for splenda and half the butter for "I Can't Believe It's Not Butter Fat Free" and these still came out delicious! I must have been lucky...no problems with lifting the cookies off the tray.

Fluffy Waffles

I didn't make the syrup but I thought the waffle recipe was easy and delicious. I substituted 2 tablespoons of ground flax seed for 2 tablespoons of oil without problem.

Almost No Fat Banana Bread

Although I did change the recipe by preparing this will bread flour, adding 1/4 cup walnut pieces and cooking it in a bread machine I can't imagine that should cause too much of a change in taste from the original recipe. To be honest I thought this tasted like a thick brick without much flavor. Even when served warm with a little butter to soften the texture this is not an appetizing bread. This is not a successful "low fat" recipe and I would not make it again.

Mom's Great Green Beans

This recipe didn't taste bad but it wasn't very flavorful either, hence the two stars. I would suggest adding more spices to this and maybe something to thicken the juices so that it reduces down to a sauce versus just sitting in liquid.

Vegetable Quiche Cups to Go

I don't even like spinach but I thought these were really tasty. I use a little more egg and lots of extra red peppers for the filling. Make sure you double (or triple!) the recipe because they will go VERY fast!

Jay's Signature Pizza Crust

Wow! Finally a pizza dough recipe that actually tastes like...pizza crust. Thank's Jay! I used a bread machine on the dough cycle [Order in: water, oil, flour (substituted bread flour), sugar (substituted "fake" calorie-free brown sugar), salt, yeast (quick-acting)] and it made this recipe that much easier! Once the dough cycle was finished I halved the recipe as other's suggested (freezing the rest for later) and it made 8 delicious thin slices (took close to 30 minutes to bake it all the way through). I like a thicker crust so I may try using 3/4 of the dough next time and using the rest for breadsticks but even as a thin crust it was very filling. Will *definitly* be making again!

Mom's Ginger Snaps

Even with the doubled spices I didn't think these had enough flavor. The texture was great though, so I think I might make again with even more ginger and maybe substitue a frosting of some sort versus the rolled sugar. I also only got 27 cookies out of the recipe (vs. 36 listed) and I thought they were pretty small. To make a healthier cookie I...used brown sugar substitute (zero calories), 1/2 c. oil and 1 T flax seed (gives you "healthy" fat!), 1/4 c. egg beaters (30 calories) and I rolled my cookies in Splenda rather than regular sugar. (~76cal a cookie)

Lacy Oatmeal Cookies

I made these by doubling the amount of flour as others had suggested and maybe I should have just followed the recipe exactly because I wasn't very impressed. The vanilla flavor seemed way too strong plus my recipe made a little over a dozen--I have no idea how you could make 4 dozen cookies out of 1 cup of oats--and I considered the cookies I made small! The taste was "ok" but not all that great. I may try the recipe again, but without the extra flour to see if that makes a difference.
