Gluten Free Chocolate Cake

I was sceptical that mayo and hot water would work but this is delicious. I paired it with simple chocolate whipped cream frosting and served it for valentines dinner. Very rich! My family didnt even know it was GF. I did try some cake without frosting and have to say the GF flour made the cake taste a little off to me so you definitely want to plan on using frosting. Also make sure your flour doesnt already contain baking soda and xantham gum before you add it.

Creamy Buttercream Frosting

It is absolutely delicious if you add more sugar. As it is the frosting tasted too much like eating butter. I tripled the sugar and it received adult raves at my daughter's birthday party. I was also really impressed that it came out very white just like decorating frosting but with better flavor.

Rolled Buttercream Fondant

Tastes great! Easy to make! I make cakes for every special occassion. I don't like the taste of pre-made marshmallow fondant so I decided to try this. It tastes wonderful...just like bakery buttercream icing. It is a little more challenging to work with. I used a stand mixer and it came together beautifully. Then refrigerated overnight and rolled out between parchment paper. While it is harder to work with it's much easier to repair/patch than other fondants I've worked with. I did notice with my test cake that if left out on the counter it tends to sweat. That can be remedied by dusting with powdered sugar. I kept my final product chilled before presentation. Also it tends to be glossy. If you prefer a matte look the dusting of powdered sugar can fix that too.

Pumpkin Fluff Dip

Served this at my daughter 2nd birthday party. All the dads loved it and all the moms now have the recipe. It was a super easy little appetizer. You can't go wrong with cool whip and instant pudding.
