Baked Delicata Squash with Lime Butter

I too was disappointed in this recipe. It wasn't terrible, it just didn't have the WOW factor to it. The chili-lime butter was good but with the squash was bland and the 2 together were just an okay combination. Nothing special. I won't be making this again

Justin's Hoosier Daddy Chili

Original recipe I would give 4 stars but after tweaking it just a bit, this was darn good chili!!! I doubled the recipe but added an extra pound of ground beef (3lbs all together) In addition to onion, I added some green/red bell pepper. I added 2 cans of drained diced tomatoes and used kidney beans instead of pinto. Instead of the cayenne pepper, I used ground chipotle chili pepper and this I think is what made this recipe excellent. I added a generous amount and it gave it a smokey taste that was just DELICIOUS!

Pumpkin-Oatmeal Raisin Cookies

What a delicious, moist cookie! I followed the recipe exactly except that I only used 1/2 the batter for the walnuts and raisins (didn't measure...just threw them in till my liking). The other half of batter I mixed in chocolate chips for my kids. YUM! I had a few cookies that didn't have any chocolate chips in and I will be honest, they were equally as yummy. Thanks for sharing!

Fresh Strawberry Almond Pie

Delicious! Nothing more to say about this pie! Here are the slight modifications I made: I doubled the crust as per other reviewers. This definitely makes for a thick crust however the crust is so darn good! I ended up baking it MUCH, MUCH longer than the recipe called for. I had NO problem with this staying together as a pie verses it being more cobbler like as some other reviewers experienced. The only other thing I did differently was I tossed the cooked mixture around with the fresh strawberries. I had used fresh picked homegrown strawberries for this pie. Mine was NOT soupy even 3 days later! I don't know if by mixing the cooked mixture around helped with that? This pie is a winner. The crust is awesome and the almond extract really compliments the strawberries! THANKS FOR SHARING! :)

Super-Delicious Zuppa Toscana

Delicious!!! The broth of this soup is spot on! Minor changes I made were I eliminated the red pepper flakes and did 1/2 hot italian sausage and 1/2 regular pork sausage. Great combo and my kids even enjoyed it! I also subsituted kale instead of spinach and let it sit a few minutes to soften before eating. GREAT RECIPE! THANKS!!!!

Lime Chicken with Cilantro Cream Sauce and Roasted Zucchini

This was wonderful BUT I think you need to eat all the components together as I am not sure how wonderful the pasta is by itself. Only ingredient/cooking change I made was I cut my chicken into chunks and marinated it for an hour. I then cooked the chicken with a package of fresh mushrooms that I had sliced thick. When I plated, I layered... pasta, chicken/mushrooms, zucchini (sliced into pieces after roasting)and topped it with the cream sauce. Delicious! Thanks for sharing!

Stewed Cabbage

With modifications, this recipe is a 5 star! I would think without the changes that it would be pretty bland. I made mine into a meal by adding meat and rice and it was delicious! This is what I changed....fried sliced kielbasa in 3T butter. Added the onion, celery and changed the garlic to 4 cloves minced. Did add 4 large spoonfuls of chicken broth to the cabbage during the simmer stage. Added 2 cans of Italian stewed tomatoes (cut my tomotoes into bite size pieces), 10 oz sliced fresh mushrooms, 2 pinches of thyme, Red Hot hot sauce, salt and pepper. I had some leftover rice that I threw in at the end and it was delicious! I also only cooked it approx 15 minutes covered as my cabbage was good and tender!

John's Crabby Caps

These were just okay. I couldn't find my original crab stuffed mushrooms so I thought I would try these. They are very salty! Here are the changes I made: I added the sherry into the mixture as suggested by other reviewers. I will suggest to probably not put the full amount in (as I did) as I think this contributed to the saltiness. I also added an extra clove of garlic and chopped up a few of the mushroom stems and sauted them with the garlic. After they baked, I topped them with provolone cheese and broiled them. The provolone made these much more enjoyable!

Raspberry Pie III

My family and I really enjoyed this pie. I did change the tapioca to 1/4c and let the berry mixture sit 15 minutes before adding it to the pie shell. That is what is recommended on the tapioca box and what I have always done with my berry pies. In saying that, my pie was not overly running. I would say it was 85-90% cooled down when we first cut it. I put it in the fridge that evening and had it the next night. My husband raved that it tasted even better cold. Served it with ice cream. Delicious! Thanks for sharing the recipe!

Leftover Turkey Casserole

My family really enjoyed this recipe including my 2 and 3 year old. They gobbled up the turkey like it was going out of style. I followed the recipe to a tee and did think this was on the soupy side also. However I served my casserole with mashed potatoes which seem to be the casserole's perfect match for the extra soupiness. The potatoes also help cut back on the saltiness of the dish too. Will definitely make again!

Baked Pork Chops I

These were to die for and thats coming from a non pork fan! I didn't think pork chops could be so tender. I only used 2 really thick cut chops and kept the rest of the ingredients the same measurements. Make sure you brown your chops till the point where they are almost burnt....I didn't have a problem with my breading falling off like other reviewers. I also took the suggestion of sauting garlic and sliced baby portabellas and adding them to the soup mixture. Wonderful suggestion! Around my pork chops I had placed potato wedges. They were delicious and will do that again. For only using 2 pork chops, I did not have a lot of sauce. If using rice to serve it with, you only need a little bit.

Barbecued Shrimp

This was delicious! I did think though this had a bit too much black pepper in it. I had Allrecipes scale the recipe down to 1 serving since I only had a pound of shrimp on hand and they gave me the conversion of 1T plus 1-1/2tsp pepper. I am thinking maybe 1T would be enough???? The only changes I made when making this was I just used the juice of the fresh lemons rather than using the whole slices. I also took one reviewer advice and added about a teaspoon or so of tomato paste to enhance the flavor. I cooked it slightly less than what it called for since my shrimp was medium size, served it over rice and my family gobbled it up! Thanks for a great recipe!

Barbecued Beef

Now I understand why this dish has over 300 reviews. Its so good you just have to rave about it! My husband liked it so much, he ate 4 sandwhiches and couldn't stop saying how good they were. I took the advice of other reviewers and made extra sauce. I made a batch and 1/2 and added it to my crockpot. Perfect amount! When done, I refrigerated the sauce while I shredded my meat. Spooning the grease off never was easier. Thanks for the tip!

Marinated Grilled Shrimp

This dish was absolutely wonderful! I would give it 10 stars if I could!!! I made an extra batch of the marinade and heated it on the stove to dip the grilled shrimp in afterwards. Next time I think I might cut back on the salt just a bit but other than that, this was better than some of the dishes I get in the restaurants! Thanks for sharing such a wonderful recipe!

Mini Meatloaves

My family loved this! I only used a 1/2 cup of milk and added onion, green pepper, garlic powder and parsley flakes. For the sauce I used Bold 'n Spicy brown mustard and result was absolutely delicious!

Cajun Skillet Surprise

The original recipe was a little bland for our taste. The "gravy" required a lot of additional spices added to it for our liking. (cajun seasoning, cumin, Red Hot, etc) I also seasoned my chicken with the cajun seasoning and used a pound of crawfish tails instead of the shrimp. The end result ended up being delicious!
