Slow Cooker Chicken and Dumplings

Sounds great just the way it's written, but used 1 can of cream of chx, & 1 can cream of onion as the husband & I love onions. Also added some pepper and some fresh parsley as well as dried celery leaves (just a pinch of the latter). VERY confused - nowhere in the recipe does it say to cut up the chx. Assuming this is someone's tweak. Might do it for ease of serving, though, closer to finish time. The entire house is redolent with the aroma. My mouth is watering. Cats are driving me crazy. Husband will be, too, when he gets home at 330p. Planning for a 5p dinner as neighbor is arriving around 4p for computer assistance. Will update to let all know how my tweaks turned out. TERRIFIC basic recipe to be used as is or modified to personal tastes. PS - Used Swanson chx broth in lieu of water.

Emily's Herb Roasted Chicken and Vegetables

DH immediately stated "THIS is a keeper!" Had some leftover fresh, slice mushrooms, so I added those just to get rid of them. Also added about 1/2 c water so there were more juices. Oh, and all I had was a package of boneless chicken breasts. Next time I will make it with bone-in, as the flavor is always better. Otherwise, as my dear departed mother would say "I followed the recipe exactly". Nice, easy recipe, Emily! Delicious, juicy, tender and flavorful.

Spicy Garlic Lime Chicken

Prepared this exactly as as written, unlike others. Husband loved it - said "THIS is a keeper!". As I am wont to do, I gave him the leftovers for today's lunch. When he got home from work today, I asked him how it was, & his response was "It was even better than last night! I wanted to give a bite to (co-worker) but decided I wanted it all for myself." I guess I'll make extra next time. LOL Thanks for a terrific recipe!

Simple Carnitas

Ohhhh, Mama! DH said "Honey, this is a keeper!". Didn't end up yielding the full amount, but that's because pieces kept falling into my mouth. It's not my fault! I swear! But my DH even cleaned up after dinner to show his appreciation. Thanks, Ken! (I hate clean up) BTW, I made this recipe following Ken's recipe exactly, as that's how I feel it should be done, not on somebody's tweaked version. 12/2/14 - Third time around on this recipe; again, making according to Ken's recipe, and now I'm mad at Ken. Just got a "new" vehicle, which my husband was SUPPOSED to register today so I can drive it. Well, he found out we were having Ken's carnita's tonight, and decided he's coming straight home for dinner. Bad Ken, for such a great recipe. And bad me for telling my husband what we were having for dinner. BTW, peeps, use a cheesecloth or other cooking bag in which to place your bay leaves and peppercorn. Makes life easier.

Mexican Casserole

I am determined to use up what is in our pantry & fridge, so was delighted when I saw this. (I have that..& that... ooo & that, too!) Used a springform pan to make removal easier. Pizza cutter worked great, BTW. Used idea of letting it rest for a few after baking. Also sauteed the onion prior to adding the beans. Used cheddar & pepper jack. Had some pretty wild salsa hiding in the pantry. My husband, raised in So Cal, loves Mexican or Mexican-style food, so this goes on the list of "keepers". We had sour cream & black olives on the side, because I am CLEANING OUT THE PANTRY AND THE FRIDGE! Loved it. Will make again. Will also use suggestions to play with this recipe, but it's great as it is. Thanks, Annie! Rockin' recipe.

Roasted Pork Loin

Delicious! Followed recipe exactly - rating it on that (hint to those who make changes, then rate.) DH loved it, had seconds, but I warned him the rest would be his lunch the next day, so if he polished it off, there would be no lunch. Ever see a 6'7", 350# tattooed biker pout? Boiled cut up small red potatoes, and made corn. BTW - DH said it was even better the next day!

Chicken Parmesan

Oh. My. God! Another Chef John gets the "It's a keeper, honey!" award from my DH. He practically licked the plate. Served on top of thin spaghetti. Not a huge fan of sauce (except on spaghetti)), so I loved the idea of spreading the sauce like a pizza - edges of chicken showing. Sidebar: Chef John, you were not your usual exuberant self - sounded as if you had a sore throat. Hope all is well.

Chicken with 20 Cloves of Garlic

I have not yet tried this, but can "taste" it in my head. Wondering two things: 1) Can I substitute minced garlic from a jar, and 2) Considering using a Ziploc bag to marinate the chicken overnight. Do you see any problem with that? Can't wait to try it - off to the grocery store tomorrow for Saturday night's dinner. Hooray for garlic!

Chef John's Chicken and Biscuits

Chef John, feel free to correct me if I'm wrong, but my mother always referred to the scum that you and I (as well as many others) remove is albumin. Sidebar on this: When my gramma made her chicken soup, she kept it at a low simmer and skimmed every last bit from the pot, resulting in golden yellow broth that was absolutely clear. Kugelblitz, whole cloves are found in your grocery store along with other spices and herbs. This recipe knocked our socks off, and I wasn't even wearing any! While I may adjust seasonings a bit next time, I made it according to the recipe. DH and I pigged out on it, and Himself took the rest to work, where he'll share with whichever one of his employees has first shift with him that day (they rotate).

Fruity Curry Chicken Salad

Oh, Mama! This is so close to Mom's that I will be using this recipe as a great substitute. Unfortunately, it was one of those situations where you say "I really need to ask Mom to write down this recipe", and then it was too late. She did add a bit more curry, but my DH doesn't care a lot for it, so this recipe provided a happy compromise. And, yes, IF it lasts, it is better the second day. My I Hate Curry! husband kept going to the fridge for "just a snack", "just a nibble", "just a little more" that the next time, I will have to make it and somehow hide it in the fridge. Thank you, Karen! DH says "This one's a keeper!" And so do I.

Grilled Bacon Jalapeno Wraps

Haven't tried, but can taste this in my head, and it's great, Have a question, though: has anyone tried these using canned jalapenos? We don't live in an area where grocery stores carry them often if at all.

Sausage Stuffing

Not too shabby as a base recipe. I think I'd add the browned pork sausage & the seasonings to the onion/celery mix prior to adding the bread in order to make sure the seasonings & pork are well-incorporated. Believe it or not, if you mince the turkey liver, add it to the pork sausage & cook it til no longer pink,it gives a subtle enhancement to the flavor. I agree about adding either chicken or turkey stock to it, but as I get older, my tolerance for salt goes down, so i use the low-sodium stock.
