Roasted Pork Loin

Delicious! Followed recipe exactly - rating it on that (hint to those who make changes, then rate.) DH loved it, had seconds, but I warned him the rest would be his lunch the next day, so if he polished it off, there would be no lunch. Ever see a 6'7", 350# tattooed biker pout? Boiled cut up small red potatoes, and made corn. BTW - DH said it was even better the next day!

Mexican Casserole

I am determined to use up what is in our pantry & fridge, so was delighted when I saw this. (I have that..& that... ooo & that, too!) Used a springform pan to make removal easier. Pizza cutter worked great, BTW. Used idea of letting it rest for a few after baking. Also sauteed the onion prior to adding the beans. Used cheddar & pepper jack. Had some pretty wild salsa hiding in the pantry. My husband, raised in So Cal, loves Mexican or Mexican-style food, so this goes on the list of "keepers". We had sour cream & black olives on the side, because I am CLEANING OUT THE PANTRY AND THE FRIDGE! Loved it. Will make again. Will also use suggestions to play with this recipe, but it's great as it is. Thanks, Annie! Rockin' recipe.

Emily's Herb Roasted Chicken and Vegetables

DH immediately stated "THIS is a keeper!" Had some leftover fresh, slice mushrooms, so I added those just to get rid of them. Also added about 1/2 c water so there were more juices. Oh, and all I had was a package of boneless chicken breasts. Next time I will make it with bone-in, as the flavor is always better. Otherwise, as my dear departed mother would say "I followed the recipe exactly". Nice, easy recipe, Emily! Delicious, juicy, tender and flavorful.

Grilled Bacon Jalapeno Wraps

Haven't tried, but can taste this in my head, and it's great, Have a question, though: has anyone tried these using canned jalapenos? We don't live in an area where grocery stores carry them often if at all.

Chicken with 20 Cloves of Garlic

I have not yet tried this, but can "taste" it in my head. Wondering two things: 1) Can I substitute minced garlic from a jar, and 2) Considering using a Ziploc bag to marinate the chicken overnight. Do you see any problem with that? Can't wait to try it - off to the grocery store tomorrow for Saturday night's dinner. Hooray for garlic!

Spicy Garlic Lime Chicken

Prepared this exactly as as written, unlike others. Husband loved it - said "THIS is a keeper!". As I am wont to do, I gave him the leftovers for today's lunch. When he got home from work today, I asked him how it was, & his response was "It was even better than last night! I wanted to give a bite to (co-worker) but decided I wanted it all for myself." I guess I'll make extra next time. LOL Thanks for a terrific recipe!

Sausage Stuffing

Not too shabby as a base recipe. I think I'd add the browned pork sausage & the seasonings to the onion/celery mix prior to adding the bread in order to make sure the seasonings & pork are well-incorporated. Believe it or not, if you mince the turkey liver, add it to the pork sausage & cook it til no longer pink,it gives a subtle enhancement to the flavor. I agree about adding either chicken or turkey stock to it, but as I get older, my tolerance for salt goes down, so i use the low-sodium stock.

Slow Cooker Chicken and Dumplings

Sounds great just the way it's written, but used 1 can of cream of chx, & 1 can cream of onion as the husband & I love onions. Also added some pepper and some fresh parsley as well as dried celery leaves (just a pinch of the latter). VERY confused - nowhere in the recipe does it say to cut up the chx. Assuming this is someone's tweak. Might do it for ease of serving, though, closer to finish time. The entire house is redolent with the aroma. My mouth is watering. Cats are driving me crazy. Husband will be, too, when he gets home at 330p. Planning for a 5p dinner as neighbor is arriving around 4p for computer assistance. Will update to let all know how my tweaks turned out. TERRIFIC basic recipe to be used as is or modified to personal tastes. PS - Used Swanson chx broth in lieu of water.
