Banana Banana Bread

Reviewed: Jun. 21, 2004
This banana bread is bursting with banana flavor and is extremely moist! Make sure not to over bake for perfect banana bread. I added some walnuts on top. This is the only banana bread recipe I ever make!

Urban Legend Chocolate Chip Cookies

Reviewed: Jun. 21, 2004
These are IT!! Absolutely the best chocolate chip cookies. If you don't like your cookie too sweet, reduce the amount of brown sugar and white sugar to 3/4 cup. Please don't omit the grated chocolated as well as the ground oats. It makes a world of a difference in taste and texture. For those reviewers who left out the grated chocolate, try it again and you'll taste a difference. I've also found that I get a better looking cookie when I mix the batter by hand rather than with an electric mixer. The trick is to let the butter soften at room temperature or pop it in the microwave for about 10-15 seconds. Make sure not to let it melt though! It alters the appearance and texture of your cookie. These cookies do take quite some time to prepare so be sure to make a huge batch and freeze the rest of them. Everyone who tastes these delectable treats raves about them and will beg you to make them. I love to bake and do it quite often. These are the most requested treats by my family and friends.

Plum Blueberry Upside Down Cake

Reviewed: Jun. 14, 2004
This cake is phenomenal! I only used plums since I did not have blueberries on hand. The tartness of the plums contrasted perfectly with the sweetness of the cake. This cake is also very easy to make. I love that it uses margarine instead of butter since margarine is so much cheaper than butter! I also used a pie pan since I did not have a cake pan on hand and it turned out beautifully. Will be making this again.

Baklava

I followed this recipe exactly and it turned out pretty looking. I also heavily buttered each layer of philo dough but it was still very difficult to cut. Nobody in the house seemed to like it except for me.

Cinnamon Coffee Cake II

Reviewed: May 28, 2004
Delicious! I only had vanilla pudding on hand so wasn't able to use the butterscotch pudding but it still tasted so good! I also added 8oz. of sour cream and accidentally left out the oil but it was still so moist. Everyone loved it except for my mom who said it was a little too sweet. If you like sweet, try this coffee cake!

Manicotti Alla Romana

Reviewed: May 26, 2004
I made this last night with "Quick and Easy Alfredo Sauce" and everyone loved it. It's very easy to prepare. The only part that was time consuming is stuffing the shells. I added about 1Tbls. to the spaghetti sauce because we like the sauce a little sweet. Give this recipe a try! It also makes a beautiful presentation.

Cioppino

Reviewed: Feb. 15, 2004
This is the best Cioppino ever!!! Much better than any restaurant I've ever tried; and I'm from San Francisco! I've made this Cioppino several times just as it is but yesterday I made it for Valentine's day for my new beau . I added 1/2 a can of condensed tomato soup and used a really good Chardonnay. The depth in flavor was delectable! He thinks I'm a major Chef!! Little does he know.. If you like your Cioppino with a touch of sweetness, definitely add the tomato soup.

Joy's Prizewinning Trifle

Reviewed: Feb. 15, 2004
I made this for Valentine's day and it was delicious! My boyfriend was totally impressed. However, there is one caveat; be careful when you fold the pudding and sour cream into the whipped topping. Do not mix it excessively because it will get too liquidy and will drip on the sides . This happened to me the first time I made it and it ruined the beautifully layered look. So I immediately ran back to the store and made it again. I put the whipped topping/pudding mix into the frfeezer to chill for a few minutes so it wouldn' drip this time. It was well worth it though. For those of you who made it for a party: how did you manage for the whipped topping to not melt in the sides?
