Creamy Macaroni and Cheese

We're in between 3-4 stars. This was the creamiest mac I've ever had, but I can see how some reviewers said the Dijon overpowers the mac. It does throw it off a little, but it's still delicious. Next time I would just leave the Dijon out.

Fish Tacos

D-Lish! Everything was finger lickin' good. We've had these tacos several times, and I prefer using only a 1/2 teaspoon of cayenne pepper; the full teaspoon can be a little over powering. Instead of picadillo, I prefer topping it with a spicy jalapeno/habanero salsa, which I make fresh myself (I'll try to get that recipe posted soon for you all).

Chicken Enchilada Soup III

I absolutely LOVE Chilis' Chicken Enchilada Soup and I was looking for a replica recipe. This one came close, but not quite. Don't get me wrong, it was still great, but it was missing that bold kick Chilis' soup has. I followed this recipe, but substituted the 1 cup water with more chicken broth, used Kraft Three Cheese Blend, and I used Maseca, because my grocer didn't carry masa harina (but I think Maseca is the same thing?). The Maseca added a great corn flavor to the soup. However, I think the three cheese blend is what threw it off. I tried to get the secret from an insider at Chilis, but of course, it turns out it's packaged and they just reheat it for you. I'm also looking for that deep orange color, which according to other recipes I've looked at, just might come from the cheese you're using. Next time I'll be trying it with Velveeta instead of the cheese to see if that gives me what I'm looking for. Definitely look forward to making this again and tweaking it until it comes out just right =)

Slow-Cooker Chicken Tortilla Soup

Just had this soup tonight for dinner and it was just what we needed. We just finished a juice detox this week so we were looking for something light and healthy to start eating again. We followed the recipe as is, but of course, we like things spicy, so we substituted the canned green chili peppers for three medium jalapenos and one serrano chili (finely chopped). It gave it just the right SPICE =) Tip: for crispy wavy tortilla strips, be sure to slice them thin.

Banana Banana Bread

I have never made banana bread and I was excited to try this recipe, only to be disappointed. I followed the recipe and blended my wet ingredients and hand mixed the banana mixture with the flour mixture with a wooden spoon. Maybe I mixed it too much? I added some additional spices (1 tsp cinnamon, 1/4 tsp allspice, 1/4 tsp nutmeg), but I don't think that's what sabotaged my bread. It came out too dense without much fluff to it. What did I do wrong?

Iced Pumpkin Cookies

These cookies were not what I had expected... they were much more =) They are far from your average cookie; fluffy and moist like personal little pumpkin breads, and the drizzle of glaze over the top adds the perfect sweetness. I love the subtle spices and hint of pumpkin you catch at the end of every bite. These will definitely be a holiday favorite every year and I am excited to bring these to Thanksgiving dinner this year.

Peanut Butter Cup Cookies

I tried this recipe as is, with no tweaks... They came out perfect! At first I was afraid they were going to be a little too rich, but the mini muffin pan provides just the right size for your sweet tooth. I did follow some of the reviews and froze the peanut butter cups before pressing them into the cookie and that worked out great. I utilized both dark chocolate and regular peanut butter cups, and they each provide their own unique flavor. Can't wait to make these for Thanksgiving for the fam =)

World's Best Lasagna

All I have to say is this is by far the best lasagna I've ever had. Its the only one I make in my kitchen :-) I like using fresh ingredients, so whenever I can I use fresh basil, fresh grated parmesan and fresh mozzarella (none of that vaccumed packaged stuff). Fresh ingredients makes all the difference in your cooking. As for the sweet Italian sausage, I prefer spicy Italian sausage, but that's just because my boyfriend and I prefer spicy over sweet anytime :-)

Best Chocolate Chip Cookies

All I have to say is.... Scrumptious!!!! These are a hit with my family and now I can't seem to stop making them :-) It's everything you want out of a chocolate chip cookie...... slight crisp outside, chewy inside and rich yummy chocolate. I like using Ghirardelli chocolate for my cookies. I didn't change a thing in this recipe other than the flour. If you like your cookies cakey or very fluffed, than use the amount of flour as is (packed). However, sometimes I like my cookies a little thin and more crisp. For that I use the same amount of flour, but measured loosely, not packed.

Baked Potato Soup I

Been getting over a cold and I was craving a hot bowl of potato soup. This was the first time I've made potato soup and this recipe was simple and GREAT! I did change a few things though. I know its supposed to be baked, but instead I boiled the peeled cubed potatoes in 4 cups of chicken broth. The potatoes absorb all the flavors of the broth which makes them so flavorful! Once boiled I added that to the milk mixture (which I cut down to 6 cups of milk, since there was about 2 cups of broth remaining with the potatoes). I'm a huge garlic fan so I also added 5 cloves of garlic minced. And I ditched the sour cream. I was also craving something meaty so I added 4 beef jalapeno sausages (Hillshire Farm), grilled and cubed. It was D-licious! I will definitely make this more often on cold rainy days :)
