Cowboy Mashed Potatoes

Had to bribe my 7-year-old to try this, but once he did, this skeptic thought it was great! He doesn't like carrots, but it doesn't taste like carrots. With everything in it, it still pretty much tastes like yummy chunky mashed potatoes! Very clever recipe, and a keeper!

Downeast Maine Pumpkin Bread

Amazing - and this is coming from someone who cannot STAND pumpkin pie! I made EXACTLY per recipe and it was perfect; no changes needed. Recipe made 4 mini loaves (40 min) and one 9x5 pan (65 min). Not only does it taste delicious, but my house smells DIVINE!

Cranberry Nut Bars

Wish I could give this 4-1/2 stars! So simple to make and makes a tasty bar. Hubby thought it tasted buttery, which he liked (frankly, I did not notice that in particular). Only reason I didn't give it 5 stars is that although it is very good, it isn't anything to write home about.

Everyone in my family loved this. Used the recommended taco seasoning recipe (a definite keeper!). I wouldn't change anything. We ate it ALL weekend.

Really, REALLY good! Takes like it came from a fancy restaurant and not my humble kitchen. Light, flaky, delicate, and fabulous flavor! I'll definitely be pulling this one out for company. ;)

Fantastic Black Bean Chili

Amazing! I usually do not like black beans, but decided to give this a try. I have been converted! I'll be using black beans instead of kidney beans from now on. The depth of flavor is amazing. I browned the meat, onions, and garlic on the stovetop and then finished it in the crockpot. I had leftovers for lunch today and it is even better! Thanks for an awesome, AWESOME recipe!

Chicken Florentine Casserole

I've made this a few times now and it is really versatile as far as how you can put it together. I usually leave out the mushrooms, use thawed frozen spinach, and real bacon. Always turns out great no matter how I put it together. GREAT FLAVORS!! Do not leave out the lemon juice, it really livens everything up and does NOT make it taste lemony at all.

Zesty Coleslaw

As written, this is a 4 star. I've made this many, many times and always get asked for the recipe. I find that only 1 tablespoon of sugar is plenty and instead of using Miracle Whip I just use 1 cup of real mayo. Those are the only changes and that makes for a 5-star recipe! This is such a great change (and improvement) on ho-hum basic coleslaw and though the dill and horseradish might seem a little strange, it really is delicious!! Thanks for a great recipe!

Ranch Style Oyster Crackers

Excellent! Nothing was overpowering and the seasoning blend was perfect! My crackers came in 9 ounce packages and I was able to coat 2 bags (18 oz versus just 12 ounces) easily. The recipe on the ranch mix called for 1/4 cup oil, but if you follow this recipe you can definitely coat more crackers without sacrificing flavor. This is a keeper!

Stuffed Kielbasa

Nice change up for kielbasa! My 6 year-old son who doesn't like mashed potatoes liked it! I made real mashed potatoes and instead of sauerkraut, I caramelized some onion and topped with that and the mozzarella cheese. To me, the caramelized onion made all the difference in the world--delicious!! I'll be putting this into my kielbasa recipe rotation--Thanks!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

SOOOO GOOD! Like some others I didn't puree this. However, I did take my potato masher and sloshed it through a few times to thicken up the broth. Delicious served over rice! I didn't have yogurt on hand, but tastes fine without it. I bet a dollop of sour cream would taste as good. Thanks for this keeper!

Meatloaf with Sour Cream Sauce

I really like this meatloaf! My take on the recipe was that it was sour cream dip (in the dairy section of the grocery store) and not just the dip mix. Anyway, I used sour cream and it made a good loaf with the sauce. This also makes fantastic meatloaf sandwiches the next day sans sauce. I'll make this again and tweak it to my taste. Thanks for a great recipe w/out ketchup!

Rhubarb Bread I

Moist and delicious! I followed the recipe exactly and it is perfect as is. This made 1 large loaf AND 3 mini loaves--perfect for gift giving! I will double the topping next time so there is plenty for all the loaves. YUMMO!! Great recipe--A keeper! Thanks!

Lip-Smacking Popcorn Concoction

Really good! I added some dried sweetened cranberries for some color and sweetness as well as drizzled chocolate flavored bark while it was cooling down. Made beautiful holiday gifts (in cello bags) that I received many compliments on. Thanks for a great recipe!
