Lamb Chops with Balsamic Reduction

Just made this for a dinner guest last night - cooked the chops for about five minutes on each side to get them to medium temperature. Also added about 3 cloves of garlic to the balsamic reduction and served on a bed of greens with goat cheese and a side of roasted rosemary potatoes. YUM! I would definitely recommend the goat cheese - the warm chop melted it a bit and made it nice and smooth. It complimented the lamb perfectly.

Chocolate Beer Cupcakes With Whiskey Filling And Irish Cream Icing

I made this recipe for a friend's birthday, and everyone loved it! They were some of the richest, tastiest cupcakes I've ever had. The only suggestion I would make to anyone who wants to make this recipe is to double the amount of frosting you make, or multiply it by 1.5, at least, in order to be able to use the amount shown in the photo. I always like to have plenty of frosting, so I know I won't run out. Would definitely make these again!

Cranberry Orange Muffins with Truvia® Baking Blend

I made this recipe substituting 1 cup of Splenda for 1/3 cup of Truvia (Splenda measures the same as sugar), butter-flavored Crisco, and whole wheat flour to make it a bit more healthy. These are some of the best muffins I've ever had, and they were low on guilt! I'll definitely be making these again!

Beets and Greens

I'm pretty inexperienced with beets, so this may take a second go for me. I had two small and one large, so I tried cooking them for 30 minutes - they probably could have done with at least 40. Unfortunately, the greens had wilted before I had a chance to use them, so I substituted kale and added a bit of goat cheese. Very tasty!

Chicken Cordon Bleu II

Made this for my fiance and myself for dinner tonight (scaled down to two servings), and it was a big hit! We had brown rice on the side, and it did quite nicely with the white wine sauce. Will definitely add this to my list to make again!

Healthier Oven Roasted Potatoes

Overall this recipe was pretty good - I used russet potatoes and left the skins on, although I was surprised at how spicy just 1/2 tsp. of red pepper made them. I'll most likely make these again, but without the red pepper. The other herbs give them plenty of flavor.

Mouse's Macaroni and Cheese

I tried this as an alternative to my mom's homemade mac 'n cheese, which was always my favorite. Since she doesn't have a written recipe for it (she just approximates amounts), I wanted to try to recreate it on my own. This recipe had a lot more butter than I remember her using, and it came out rather oily as a result. Also, there was a bit too much pepper for my taste. It was otherwise pretty good - if I attempt it again, I'm going to cut the butter by at least half and try a bit less pepper.

Fast and Friendly Meatballs

Very quick and simple recipe! I made these tonight for dinner with spaghetti (I used lean beef instead of turkey), and added just a bit of garlic and onion powder in addition to the Italian seasoned breadcrumbs for extra flavor. I think they could have used just a bit more seasoning - I'm going to experiment a bit next time I make them.
