Colleen's Slow Cooker Jambalaya

Delicious! I used petite diced tomatoes without draining and made the rice separately in a rice cooker. It was a bit soupy, but when added on top of the rice gave a nice balance. Next time, I would add more celery as I really enjoyed its texture.

Difficult to make - the dough was SO sticky. However, these are absolutely delicious! Will make again, despite the annoyance of the sticky dough.

No Tomato Chili

Great recipe. My husband doesn't like regular chili, but we eat this one over rice and he likes it! I don't use chili sauce. Instead I substitute 2 15 oz. cans of green enchilada sauce, so that there are absolutely no tomato products in the end result. I also add a small (5-6 oz) can of diced green chili peppers into the mix with the enchilada sauce, as well as two cans of pinto beans (in addition to the other beans listed in the recipe). So glad I've found this recipe so I have a chili that my husband will eat and I'm not stuck having to eat the whole pot myself!

Beef Stroganoff III

Pretty good. I took the suggestion of others and marinated the meat in red wine for about 2.5 hours (a little longer than I meant to) and I think it made the meat toooo wine flavored, which translated into the sauce tasting like wine, so be careful to marinate it a MAX of 2 hours. Overall it was great! Added about 3 Tblsp. chopped garlic with the onions. Loved that this recipe doesn't use cans of cream of _______ like other recipes do. Husband loved it!

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker

I did not care for this recipe.. I am a very experienced cook, and I cook mostly ethnic dishes (african, middle eastern, asian, etc), so this was right up my ally - so I thought. I followed the recipe exactly, adding chickpeas, and after 5 hours of cooking, it simply did not turn out. This is the only dish I've ever came across that can't be tweaked to make it any better.

Chocolate Eclair Dessert

This is a great dessert. It is best if you make it a day ahead so that the graham crackers can soften. I used chocolate mint pudding with dark chocolate frosting.. OMG! Delish!!

Coconut Cream Dessert

This is really fantastic! My husband LOVES it! I doubled the crust at the recommendation of other users, but actually wish I hadn't. I don't like pie crust anyway, so thinner would have been better for me. Doubling made it almost 1/4 inch thick! I couldn't find instant coconut pudding, so I used the regular, but kept the milk at 4 cups for the 3 boxes. The only problem there was that the pudding was a little warm so the whipped cream on top dissolved a bit. Still tasted great though! I didn't toast the coconut either and it was still wonderful. In fact I liked the angelic look of the white coconut on the whipped cream. I would like to try this recipe again, swapping out the coconut pudding for other flavors.. like banana and topping with crushed vanilla wafers.. for variety. The pecans really make the crust taste great.. so don't leave them out!

This turned out really good. I also added about a cup of broccoli florets and half a green pepper (chopped) and sauteed them with the onions. They added a lot of necessary flavor! Very good!

These are super easy and they turned out good, but I would also sprinkle cinnamon on top after adding the sauce. I also had to cook them for about 30-35 minutes, instead of the instructed 20.

The chicken has a good flavor. Just be sure to watch that you don't use too much onion soup mix. It easily overpowers the sweetness.

This recipe is very good. The chicken looks beautiful when topped with the pineapple. The only change I would make: add some of the juice from the pineapple rings to the sauce in order to increase the sweetness.
