Baked Soy Lemon Chops

I made this recipe tonight and on a wim since I happen to have all of the ingredients already. I took the advice of another person and cut the soy sauce to 1/4 cup and had 1/4 cup of water. I only added a little more of the lemon juice, and pressed the 4 gloves of garlic since it was easier. I marinaded for 1/2 hour and baked at 350 for 30 minutes with marinade so no basting was needed. The meal had a nice flavor to it, and no flavor over powered another. I'll be making this again, except I will add a touch more lemon and thicken up the sauce a bit. Very good!

Slow Cooker Au Jus Pot Roast

Just like other reviewers I was a little apprehensive of how good this would taste after looking at the ingredients, but this was delicious!! I eyeballed the amount of worcestershire sauce, used 2.5 teaspoons of oregano (I really like oregano). Also we didn't have the Montreal seasoning (although I swore we did!) so I sprinkled some cayenne, onion powder, garlic powder, and hamburger seasoning that we had. I seared on each side like suggested an I do think it is a needed step. I used basil garlic pasta sauce because thats what we had and when I took out the meat to thicken the gravy with corn starch, I used a stick blender to break up the tomato chunks. Overall great recipe will definitely be using this again!! My boyfriend and his family who I made this for, swore up and down that this had a gravy additive because it was that good!!

Cranberry Sauce

This was a great recipe! Every year I make homemade cranberry sauce but haven't stuck to one recipe yet because they were all missing "something". I think I found it in this one! I read other reviews and used 1/2 cup of oj and 1/2 cup of water, 1/2 cup of brown sugar and 2 T of truvia which is equivalent to 1/2 cup of regular sugar. Lastly I added 2 pinches of ground cinnamon near the end of cooking which brought it all together. Overall I got several compliments and I'm using this one from now on. It's not too sweet and not too tart..just perfect!

Banana Crumb Muffins

Before trying this recipe, I read MANY reviews. I changed the recipe slightly only because I'm cooking for a diabetic family. I used 1/4 cup truvia sweetener, 1/4 cup of honey and only 3 tbsp of brown sugar, 1/3 cup of canola oil, also 4 VERY ripened bananas. I followed other reviews, I baked for 15 min. And THEN added the crumb topping and baked for 5 more min. Of course, with all the hype I had to try them fresh from the oven. The muffin itself was tasty, but the topping (made exactly like the recipe) was bland ad very dry (from the flour I'm guessin?) so to salvage it, I lightly brushed off the topping, added a cinnamon/sugar blend for added sweetness and put back in the oven to 'carmelize'. I'm determined to make this again, just need to tweak some more.
