Before trying this recipe, I read MANY reviews. I changed the recipe slightly only because I'm cooking for a diabetic family. I used 1/4 cup truvia sweetener, 1/4 cup of honey and only 3 tbsp of brown sugar, 1/3 cup of canola oil, also 4 VERY ripened bananas. I followed other reviews, I baked for 15 min. And THEN added the crumb topping and baked for 5 more min. Of course, with all the hype I had to try them fresh from the oven. The muffin itself was tasty, but the topping (made exactly like the recipe) was bland ad very dry (from the flour I'm guessin?) so to salvage it, I lightly brushed off the topping, added a cinnamon/sugar blend for added sweetness and put back in the oven to 'carmelize'. I'm determined to make this again, just need to tweak some more.
