Soft Dinner Rolls

Made these this morning as a test just to see if they would turn out for a big family dinner we are hosting on the weekend. They turned out perfect! I can't believe I made them! If I can make them, anybody can. I used all-purpose flour and bread machine yeast as that's what I had.

Extreme Banana Nut Bread 'EBNB'

Definitely a keeper! Was skeptical because I thought the butter was a huge amount and some reviews said it was a gooey mess. Not so! I have been looking for the perfect banana bread recipe and have tried several but this is the best! The only thing I changed is I added 1 teaspoon of allspice just because I wanted the extra flavour. I also used frozen sliced bananas that I get at a speciality store. The bag is enough to make two batches so I am making more now. I also lowered the temperature to 325 and it took exactly 70 minutes to bake. I usually burn, well, everything, so thought this was safer. Oh, and I did half white and hald brown sugar only because I had limited white on hand.

Buttermilk Parmesan Potatoes

I made this last night, it was taste but I did add extra garlic, cheese, and a bit of paprika. I also put bread crumbs on top. Downfall is it took too long to cook, even after an hour and a half they were barely cooked. Son loved them.

Chocolate Icing

I used this icing simply because I had the ingredients. Based on other reviews, I used 5 tablespoons of milk and 2.5 tablespoons of cocoa. Off the spoon, it tastes great. I took my cake from the oven, poked holes in it and simply poured the icing over my still hot cake. I did keep it on a double boiler when mixing in the icing sugar and cocoa. Hopefully it still firms up, since I did add extra milk. Can't wait to try it!

Honey Baked Chicken II

Awesome! Made it again tonight, increasing curry powder, and using skinless but bone-in chicken breast. I plan on bbq'ing a whole chicken on the weekend at the trailer-my neighbours will be so jealous! Remember to keep basting and don't over cook it.

Chef John's Peach Cobbler

So very good! Didn't have a dutch oven so split it between two casserole dishes and it still was awesome. Used canned peaches and allspice instead of chinese five spice as that is what I had. Was fantastic. Made it twice already. I also did not have a problem with too much liquid and followed the cooking time/temps exactly and it was perfect.
