Baked Chicken with Peaches

I know a lot of you hate when this happens, but I used this as a base, and it was fantastic. Had boneless chicken thighs. Dredged in seasoned flour (salt, pepper, onion & garlic powders), and browned in olive oil in skillet. Moved chicken to plate, added a little more olive oil and some of the seasoned flour to make a roux. Dumped in a can of peaches with juice and another 2-3 fresh peaches sliced. Added brown sugar, ginger, cloves, splash of white vinegar (no lemon juice on hand) and chicken stock. Brought to boil so that it started to thicken, then returned chicken to skilled and put in oven at 350 for about 15-20 mins. Served over Basmati rice.

Sweet and Spicy Stir Fry with Chicken and Broccoli

Delicious! Tripled the sauce, and had the chicken with carrots, celery, broccoli. And yes I did marinate the chicken first. Will make again with beef, pork, and even just the veggies over rice.

Absolutely Ultimate Potato Soup

I have no idea how anyone could not love this soup. Sure it may not be the healthiest soup but nobody's making you eat it all in a single sitting. I was prepared to follow the recipe exactly including making the roux but when I saw that a number of people said pureeing some of the soup gave it enough thickness, I did just that to save some work. And they are right. I also did not add crumbled bacon until the soup was served. It's a wonderful, delicious soup and now I want to use this as a base for chowder!

Soft Sandwich Buns

Uncle Wynn's Bread Machine Rye

Very good, very easy to make, but like a number of others, the dough fell when the heat started. Was hoping for a light, airy, soft rye but I have yet to find one. Made exactly as listed.

Shredded Beef Chimichangas

WOW! Flavor was great and the texture of a crispy tortilla was perfect. I made these with chicken and brushed tortillas on one side with melted butter, baked at 500 for 10 mins, simply awesome.

Camp Cornbread

THIS is the one. Don't look any further if you are looking for a sweet, moist cornbread (like I have been)! Thanks to the reviewers who tested and perfected (and likely corrected) the recipe, I used the following: 2 boxes Jiffy mix, 2/3 cup milk, 2 eggs, 1 14.75 oz can creamed corn (not drained or rinsed, dump it all in!), 1/4 cup sugar, 1/4 cup honey. Baked in a 9x9 square pan at 350 for 50 minutes. Could have used a few mins more but it was so thick and moist!! That's why I did it in the smaller pan, to keep it thick and cake-like. My apologies to the cornbread purists, this is probably nothing like what you enjoy, but it's what I've come to love.

Basic Microwave Risotto

I wanted to make this as-in and give it a fair rating, because I recently had risotto for the first time. It was at a cooking demonstration given by professional chefs and it was amazing. I bought the Arborio rice and had plans to make it today. However things didn't go as planned so I need a quick cooking method. I thought it was very good. Not as soft and creamy as I remember the other stuff but it had a bite to it that I liked.

Easy Vodka Sauce

Definitely easy but not quick. My mistake! I did add herbs like others suggested. Also found that it made quite a mess (splattering) so I had to cover skillet. I halved the recipe and the times were off. All in all i would make again, very tasty!

Thanksgiving Leftovers Croquettes

These were delicious. I added gravy to the mix and I think it made them a little too fragile during the breading process. I thought it would need more moisture to hold together but I guess not! I would definitely make again and leave the gravy for topping.
